San Diego line caught Bluefin Tuna “Riblets” with a sweet chile glaze. Finger licking good and a beautiful way to honor the nose to tail concept.

This Bluefin Tuna was portioned for our daily fish board as well as made into an incredible ceviche.

But we never stop there.

The skin and bones were turned into gorgeous stock to poach our albacore tuna loins for the menu, and these “Riblet” flavor bombs we’re created from the hard work of Chef Shawny and his saw to savor all that often tossed and forgotten meat tucked in-between the bones.

Sustainably is not only about seasonally eating or catch method, but also about finding creative ways to fall in love with every part of the animal.

Cascais is a sister city to Sausalito, so it seemed about time to offer Pica-Pau! A traditional Portuguese dish than literally translates to “Woodpecker”, we’ve modified it to be a seafood version. Bitesize cubes of Bluefin, sautéed in what is best described as a garlicky sauce and served with olives and pickled vegetables.

Happy Cinco de Mayo! Enjoy the day with our Chorizo Tacos. We use local rockfish, mince it down to tiny pieces, then season and cook as normal chorizo. It’s very hard to figure out it’s not pork, and sometimes seafood is more fun when it doesn’t look like a fish. .
