A little Catskill update... 👀

I stopped by the new shop today to drop a few things off and couldn’t resist sharing a tiny sneak peek of the tile work going in on the bar.

That’s all you’re getting for now though! 🤫 We’re trying to save some surprises until everything is finished and ready to share.

A huge shoutout to my fiancé, Anthony from Anthony Cunzio, who has been working incredibly hard, helping bring this space to life. The attention to detail and craftsmanship have been amazing, and I can’t wait for everyone to see the finished result.

More soon... but not too soon. 😉

5am mornings aren’t always glamorous, but there’s something a little romantic about them ☀️☕️

The house is still quiet. The coffee is brewing. The sky is just starting to wake up.

Before heading to the shop this morning, I made myself a cup of coffee at home and snuck in a class at . There’s something really special about moving your body before the emails, before the rush, before the endless to-do list starts demanding your attention.

Then it was off to Josie’s.

More coffee (obviously). A few moments to get everything ready. The familiar sounds of the espresso machine. The smell of fresh coffee filling the shop. Unlocking the doors and waiting for the first customers to wander in.

Owning a coffee shop means a lot of early mornings, but honestly, I wouldn’t trade them.

There’s a certain magic to being part of a town waking up. 🤍

There’s something really emotional about watching a space come together piece by piece - the long days, the decisions, the setbacks, the excitement, the moments where you can finally start to picture people sitting inside with coffee in their hands.

Still lots to do, but seeing the bar come to life this week felt like one of those little milestones worth celebrating ☕️

Memorial Day weekend ☀️🇺🇸

We’ve been here all weekend long with regular hours, but we’re also open Memorial Day Monday from 8am-1pm!

Our summer drinks officially launched, the patio is open, and honestly… this feels like the start of the season we wait all year for. Slow mornings, iced coffees, sunshine through the windows, and a shop full of people lingering a little longer.

Whether you’re grabbing coffee before a weekend adventure, meeting friends for breakfast, or slowing down for a bit in the sun, we’d love to see you this weekend 💛

Summer Drink #5 taste testing ☀️

One sip of this one and we immediately understood why everyone was talking about it ☕️🍓🥐

Our summer version of the viral raspberry danish latte is layered with raspberry, espresso, and a vanilla cream cheese cold foam that tastes almost like the center of a fresh pastry from the bakery case.

It’s sweet, creamy, slightly tangy, and really nostalgic in the best way — like coffee and dessert wrapped into one drink without feeling too heavy.

The original recipe was shared by Little Joy Coffee, and we loved the idea behind it so much. There’s something really special about small coffee shops sharing creativity with each other, and after trying it ourselves, we knew we wanted to bring a little version of it to Josie’s for the summer.

This one feels soft, comforting, and a little indulgent… like sitting outside with a latte and a pastry on a slow summer morning.

Summer Drink #3 taste testing ☀️🍊🌿🍯

This one is a grapefruit honey thyme latte made with fresh grapefruit, local honey, and house-made thyme syrup.

Bright citrus, soft honey sweetness, and a subtle herbal finish from the thyme - fresh, layered, and incredibly smooth. It has that perfect balance of refreshing and comforting that feels made for slow summer mornings and warm afternoons.

Light-filled, citrusy, and a little unexpected… 🍊
