Simon’s Coffee House was established in 2001 by my English immigrant parents Simon and Michelle Kirby. They opened Simon’s with the ethos of community and healthy eating. Both my parents being mostly vegetarian at the time it just all seemed so simple: Provide a menu that all people can enjoy with the consideration of allergies and dietary restrictions, like veganism. What started as a quaint concept became a full-on revolution. But, when it really began was when we started creating our first veggie burgers. What once was an idea, or an inspiration has now become the heartbeat of our cafe.

Hi, my name is Tyler Kirby and I am the son of Simon and Michelle. My wife, Maya and I took the reins over of my family’s restaurant in 2024. Maya and I both believe in whole food, handmade with love. To us, Simon’s isn’t just a normal restaurant, it’s our other home. We open our doors for all people to come and be a part of our local community.
