There’s nothing quite like a hearty plate of tender ribeye, golden roasties, and medium fried eggs with sunny yolks just waiting to be dipped into. This is the kind of comforting breakfast-for-supper Grandma would set down with a smile. 🥩🍳
INGREDIENTS
For the ribeye:
• 2 ribeye steaks, about 10–12 oz each
• 1 1/2 tsp kosher salt
• 1 tsp black pepper
• 1 tbsp olive oil
• 2 tbsp butter
• 2 garlic cloves, lightly crushed
• 2 sprigs fresh rosemary or thyme
For the roasties:
• 1 1/2 lb baby potatoes or Yukon Gold potatoes, cut into chunks
• 2 tbsp olive oil
• 1 tbsp butter, melted
• 1 tsp garlic powder
• 1/2 tsp smoked paprika
• 3/4 tsp salt
• 1/2 tsp black pepper
• 1 tbsp chopped parsley, optional
For the eggs:
• 4 large eggs
• 1 tbsp butter
• Salt and pepper, to taste
DIRECTIONS
1. Preheat oven to 425°F. Place the potatoes in a pot of salted water, bring to a boil, and cook for 8–10 minutes, just until slightly tender. Drain well and let them steam dry for 2 minutes.
2. Toss potatoes with olive oil, melted butter, garlic powder, smoked paprika, salt, and pepper. Spread on a baking sheet in a single layer. Roast for 30–35 minutes, turning halfway, until crisp and golden. Sprinkle with parsley if you like.
3. While the potatoes roast, pat the ribeyes dry. Season both sides generously with salt and pepper. Let them sit at room temperature for about 20 minutes.
4. Heat olive oil in a heavy skillet over medium-high heat. Add the steaks and sear for 3–4 minutes per side for medium-rare, or 4–5 minutes per side for medium, depending on thickness.
5. Add butter, garlic, and rosemary to the pan. Spoon the melted butter over the steaks for 1 minute. Transfer steaks to a plate and rest for 5–8 minutes before slicing.
6. In a nonstick skillet, melt butter over medium heat. Crack in the eggs and cook until the whites are set and the yolks are still soft but slightly thickened, about 3–4 minutes. Season with salt and pepper.
7. Plate the crispy roasties, sliced ribeye, and medium fried eggs together. Spoon a little steak butter over the meat if desired.
TIP: For an extra cozy touch, serve with buttered toast or a few roasted tomatoes on the side.
