What unfolds over the course of the evening is the result of countless hours of preparation, collaboration, and care long before the first guest arrives.

Two weeks ago, Roux 30A was honored to be selected in The MICHELIN Guide Florida 2026. While we are deeply grateful for the recognition, moments like these are never the work of one person alone.

They belong to the team that arrives each day with a shared commitment to hospitality, craftsmanship, and creating memorable experiences for every guest who joins us at the table.

A note from Chef Nikhil:

When I opened Roux 30A, my goal was simple: to create the kind of restaurant I would want to dine in. A place where guests could gather around one table, share a meal, and experience food that is thoughtful, personal, and rooted in craftsmanship.

To see this passion project selected in The MICHELIN Guide Florida 2026 is both humbling and incredibly meaningful.

While this restaurant reflects my vision, it would not be possible without the people who bring it to life every day. I want to especially thank our Chef de Cuisine, Tim Chyrek, and our entire kitchen and service team. Their dedication and hard work are at the heart of every experience we create.

Thank you to our farmers, fishermen, and purveyors, and most importantly, to our guests. Your support has allowed us to continue doing what we love.

A note from Chef Nikhil Abuvala

Happy Father’s Day to all the amazing dads out there – new, seasoned, and soon-to-be! This year, Father’s Day holds a special place in my heart as I eagerly await the arrival of my son in just a few weeks. As I prepare to step into the role of a father, I can’t help but reflect on the incredible father figures who have shaped my life in various ways.

Their wisdom, love, and strength have left a lasting impact on who I am today. Although I have not yet met my son, I aspire to be the kind of father he will admire and one day treat his own children with the same love and care. As I get ready to embark on this beautiful journey of fatherhood, I am filled with gratitude and excitement for the opportunity to be a father for the first time.

At Roux 30a, we celebrate the bonds that bring us together, and today, we honor the dads who make the world a better place. Here’s to the laughter, the lessons, and the love that fathers bring into our lives. Wishing every dad a joyful and memorable Father’s Day!
