Today we honor the Indigenous peoples of this land, past and present.

Santa Fe sits on the ancestral homeland of the Tewa people, who called this place O'gha Po'oge, "White Shell Water Place," long before it had any other name. The Pueblo nations of Northern New Mexico are still here, and their cultures, languages and foodways still shape everything about this place.

As a kitchen, we owe a lot to that. Corn, beans, squash and chile were cultivated and cared for by Indigenous farmers for thousands of years, and they still feed us today. Chef Dhiru came to New Mexico from far away and found a home here. Every time we cook with local ingredients, we're reminded that we're guests on this land, and that the food we serve is built on knowledge that started long before us.

Today we're grateful, and we're listening. 🌽

Isha & Karl wanted their 140 guests to taste real Tamil cooking at their SITE Santa Fe wedding, and Chef Dhiru built them a menu that did exactly that. They even asked for a Sri Lankan specialty, and he worked on it until it was perfect.

Their guests are still talking about the deep-fried idlis. 💛

Forget the carving station. 🔥 Our made-to-order dosa station is the part of the night your guests will still be talking about at the next wedding.

Dosas are thin, crispy South Indian crepes made from a naturally fermented rice and lentil batter, cooked right in front of your guests. Fillings include classic potato masala, sweet potato, paneer, Madras chicken, and more!

A big congratulations to our friends at Paper dosa on earning a Michelin Bib Gourmand! We're especially proud to celebrate this milestone, as Paper Dosa is part of Chef Dhiru's story here in Santa Fe. He first came to New Mexico to help open the restaurant, and we're grateful for the connections and community that grew from that experience. Well deserved! ❤️

A very special moment for Chef Dhiru. ❤️

At the Edible New Mexico Local Hero Awards, he accepted the honor of Best Caterer with a few words about what it really takes to run a business, and a family, together.

Running a business with a family is no easy feat. And in a state with so many wonderful catering companies and talented food professionals, being recognized in this way is a tremendous honor.

Chef Dhiru thanked the people who make Marigold Kitchen possible every day: his team, his wife, his in-laws, and every single person who has enjoyed our food and invited us to their table.

Thank you for letting us feed you, celebrate with you, and be part of your community. ❤️
