Okay, the shop is shut down and most of the corporate BS is in the past. We are starting to get a little more bandwidth back.
One thing I'm personally excited about, I'm forming a Pizza Makers Guild: a focused, craft‑driven group for the people who actually move the needle in pizza—owners, dough leads, R&D decision‑makers, veterans, and anyone serious about the craft. You don’t need to run a shop today. You just need to bring real experience and real curiosity.
This is open to everyone, but our in‑person gatherings will start in California. North or south, Bay or LA, if you’re on the West Coast and you care about the work, you’re welcome in the circle.
What we do:
- Monthly gatherings at rotating pizzerias to talk dough behavior, gluten structure, fermentation timelines, oven performance, cheese melt, toppings, and the operational realities behind all of it. Industry trends, operational difficulties, we will share stories of successes and failures.
- Quarterly R&D labs where we run controlled experiments, compare results, and build a shared knowledge archive instead of relying on anecdotes.
- Small, technique‑driven contests designed to push skill and sharpen instincts—not trophies, not hype, just better pizza. And maybe trophies.
- Industry conversations that matter: trends, challenges, sourcing issues, labor, equipment, and the support this industry rarely provides for itself.
- A neutral‑ground code: If you can’t collaborate, this isn’t your room.
We’ll start local, but the long‑term plan is bigger: guild meetups at industry events, collaborative projects at conventions, and a West Coast/Regional presence that actually contributes to the national conversation on pizza and pizza adjacencies.
If you’re a pizzaiolo, dough specialist, operator, or a veteran with real R&D influence—anywhere in California—reach out to join the founding circle.
