V. Tahitensis, Papua New Guinea, Ignotus beans arrived today. Flavors are reminiscent of oak, cherry and have a soft vanillin punch. They went straight into a bath of vodka for storage and to make a double fold vanilla extract. A few pods snuck out to become a vanilla lavender sugar. I can’t wait for these beans to become a wonderfully delectable gelato!
