This sauce is a South African sauce called Peri Peri. It’s so delicious. I wish mine had more spice to it but sadly my Thai chilies were not hot. But this is super flavorful. We tossed our potatoes in this sauce and our chicken. You could roast veggies and then toss them in this sauce. Tofu, drizzle on eggs, fish .. the possibilities are endless. Give this sauce a try. It’s so easy… everything goes in the blender.
2 red bell peppers, 5 Thai chiles, 1 red onion, 6 cloves of garlic, 1 juiced lemon, 1/4 cup of Redwine vinegar, 1 tablespoon of smoked paprika, 1 teaspoon of salt blend and slowly add a 1/2 cup of olive oil. Keeps in the fridge 2-3 weeks.

Vegan Asian eggplant stir fry. I posted this on a reel and it was an experiment. It came out delicious but I needed to get the recipe in order. Eggplant I used Japanese eggplant chopped in bite size chunks in a bowl with water and salt for 15 mins. Strained and patted dry then tossed in cornstarch and salt. Heat 3-4 tablespoons of vegetable oil or avocado oil and fry in batches. Soak dried shiitake mushrooms in warm water for 20 mins. Dice or slice onions, garlic, ginger Serrano, and mushrooms once they are hydrated. Szechuan peppercorns (I crushed with my knife). I heated a tablespoon of sesame oil and vegetable oil in a fry pan added my pepper corns for 3 minutes and then added my onions, garlic, Serrano, ginger, mushrooms. Let veggies soften then add 2 tablespoons of brown sugar let dissolve. You will use a bowl or large measuring cup for the sauce. add 1/2 cup of soy, 1/4 cup of water, 1/4 cup of rice wine vinegar and 1 tablespoon of corn starch. Mix all this together before adding to veggies in the pan. Let this thicken and add your eggplant. I garnished with green onions,cilantro,sesame seeds. You can make this spicer by adding some sriracha or chili flakes. Hope you enjoy!!

First day back in San Antonio. We cooked dinner to celebrate what would have been my parents wedding anniversary. We like to make a meal we knew they would have enjoyed. Pan roasted chicken with garlic mashed potatoes, sautéed spinach and a mustard cream gravy.

My husband loves charcoal grilling. He has had his blue Weber for 34 years( his longest relationship) his words. He tells me 6 months ago the bottom is rusting out. We buy a new one, we put it together and he’s still not ready to get rid of this. Our new one has never been used. ❤️
