🌽🇲🇽Corn isn’t just a crop in Mexico — it’s culture, history, and global influence.
People often ASK/TELL me “is it Mexican corn” (implying is it white corn) and the answer is usually, YES! Unless due to drought or seasonal changes corn is often IMPORTED and repacked by an American farm and resold. The corn itself was grown in Mexico, or is probably an origin of a Mexican breed.
Why we often don’t have WHITE CORN: Quality white corn is hard to come by. White corn because of its breed had a different skin, and texture. And when imported loses a lot of its integral properties like juiciness. I WILL ONLY BUY WHITE CORN IF IT MEETS MY QUALITY STANDARDS. (Ask my produce vendors, I’m picky.) White corn fries out very quickly during importing and I will be lucky to have a handful of usable corn out of a whole sack.
With that said, if I have white corn… run don’t walk. Because it will a-maize-ing!
