​Here is one of your all-time favorites: Penne a la Vodka, animated version. It’s that dish you always ask for because of its creaminess and that unique touch that only vodka and a great sauté can give. 🍅🥛🔥

PENNE A LA VODKA
Method:
​Sauté: Heat butter and oil. Sauté onion and garlic until translucent.
​Deglaze: Pour in the vodka. Let it simmer and reduce by half to cook off the alcohol while keeping the flavor.
​Simmer: Stir in the tomato purée and cook for 10 minutes. Pour in the heavy cream and stir until you get that iconic orange glow.
​Toss: Add the al dente penne directly to the pan with a splash of pasta water. Toss until perfectly coated.
​Serve: Turn off the heat, fold in the Parmesan, and serve creamy—just like in the video!!

Di Roma Signature Marinara Sauce 🍝

Our house marinara is slow-simmered to bring out a rich, authentic Italian flavor. Simple ingredients, cooked with care.

Ingredients
• 3 tablespoons extra virgin olive oil
• ½ onion, finely chopped
• 3 cloves garlic, minced
• 1 tablespoon roasted garlic (for deeper flavor)
• 1 large can (28 oz) crushed tomatoes or San Marzano tomatoes
• 1 tablespoon tomato paste
• 1 teaspoon dried oregano
• 1 teaspoon dried basil
• ½ teaspoon red pepper flakes (optional)
• 1 teaspoon honey or sugar
• Salt and black pepper to taste
• Fresh basil leaves

Instructions

1. Heat olive oil in a saucepan over medium heat.
2. Add the chopped onion and cook until soft, about 4–5 minutes.
3. Add the garlic and cook for about 30 seconds until fragrant.
4. Stir in the tomato paste and cook for 1 minute to deepen the flavor.
5. Add the crushed tomatoes, oregano, basil, red pepper flakes, honey, salt, and pepper.
6. Let the sauce simmer on low heat for 25–30 minutes, stirring occasionally.
7. Add roasted garlic and fresh basil at the end for a richer aroma.

Chef’s Tip:
Finish the sauce with a small piece of butter and a drizzle of olive oil for a smooth, restaurant-style flavor.

Slow cooked and full of flavor — the signature taste of Di Roma.

I would like to share a small but very meaningful story about Mr. Daniel, our landlord.
When I informed him that we were thinking about leaving, he immediately offered to lower the rent by $1,000 to help me cover my other expenses. That gesture meant more to me than words can express.
Acts like this show not only professionalism, but true kindness and support. I want to thank him publicly for his generosity, understanding, and for standing by us during such a difficult moment. I will always be grateful.
