We regretfully announce the permanent closure of Bánh Vivant.

We recognize this may come as a surprise and for that we apologize, especially to those who were enthusiastic about our return after the winter hiatus, we did not predict this exactly and share your discontent. That being said, It gave us much satisfaction to take this venture with all of you and proud of the food we cooked, our menu and our staff. To our customers who made it all possible we enjoyed your company and conversations very much and can’t thank you enough. We’ll miss the space and the sunny days slinging Bánh MÌ.

Our decision to close was not an easy one but a collection of challenges business and personal. Perhaps, in time, it would have flourished but running a restaurant, even a tiny one, takes a tremendous amount of work, dogged commitment, and well, the stamina to do both. We have nothing but respect for those who do it so well here in Salida and all over in an industry that is notoriously unpredictable and presently experiencing many pressures and changes.

Our philosophy has always been to create dishes with big flavor and good quality ingredients made with care to rouse our guests’ excitement. We want you happy and always aimed to create a friendly environment. We hope to stay resolute in this and look forward to serving you all again in the future one day. For those who may not have seen our post yesterday this is our last week we’ll be open for a while so come get while the getting is good! Holiday hours:

This week’s specials are Khao Soi and Pineapple Curry

Khao Soi! One of our all time favorites. This Northern Thai/Laos classic (also known as Chiang Mai Noodles) is prepared with slices of chicken thigh in a tangy coconut milk & chicken broth soup stewed with our house curry paste made with turmeric, coriander, curry powder, shallots, chilies, garlic and ginger, poured over egg noodles and topped with cilantro, spring onions, lime wedge, house lemongrass chili oil and bean sprouts. Staff favorite!

Our Pineapple Curry (Kaeng Kua Sapparot) is prepared with fresh pineapple, potato, yellow squash, jalapeño and carrot in a coconut milk base stewed with our housemade Kua paste which is essentially an “orange” thai curry paste with elements from both the Thai Red and Yellow curries.

Gluten Free. Vegan.

Greetings everyone!

As we move into these slower cold months we’ve taken the decision to close up shop until after February to give ourselves a little sabbatical and revamp the space. We WILL be open this week however with the following days and hours and would love to see you all. This week’s specials are Hotel Chennai & Achari Paneer

Hotel Chennai is our own creation, riffing on Eastern Indian Coastal curries. This dish is made with chicken thigh pieces simmered in a caramelized onion, tomato and pineapple gravy with red chilies, ginger, garlic, lime, vinegar and house spice blend including cumin, coriander, star anise, fennel, nigella, cardamom, black pepper and cinnamon.

Gluten Free.

Achari Paneer is a popular North Indian dish made with homemade cottage cheese (Paneer) with a touch of saffron in a tangy and spicy sauce made with Indian pickling spice blend known as Achari Masala, yogurt, tomato, bell pepper and onion.

We will be closed tomorrow for Thanksgiving! Reminder that curry specials are available all day now!

Vindaloo, the classic Portuguese influenced Goan dish, is prepared with pork stewed in a sauce of red chilies, garlic, vinegar, caramelized onion, tomato, red lentil and spice blend of primarily coriander, black peppercorn, cinnamon and green cardamom. Ask for it spicy if you like!

Our Kaeng Phet (Thai Red Curry) is prepared with zucchini, carrot, broccoli, mushrooms, sweet peas and red onion cooked in coconut milk with curry paste made from scratch. Topped with spicy pickled cabbage.
