A Heartfelt Thank You Watervliet family — we had planned to keep the pots boiling in Watervliet through the end of the week… but due to unforeseen circumstances, we’re having to close starting today.

It’s not the way we hoped to wrap up the season, but y’all showed us so much love all summer long. Thank you for supporting us, cheering us on, and keeping Cajun flavor alive in Southwest Michigan.

And remember...we always welcome you at our Saint Joseph MI location for all your Cajun cravings!

Until then — Laissez les bon temps rouler, hopefully we’ll see you there soon.

Move Over Burgers — The Bourbon Street Po’ Boy Reigns Supreme!
Forget the mystery meat patty — we’re talking slow‑cooked beef chuck roast, sliced thick, simmered in rich gravy until it’s melt‑in‑your‑mouth tender. Served on a toasted artisan French baguette, fully dressed with crisp lettuce, juicy tomato, and creamy mayo.

Every bite is savory, and straight‑up Cajun comfort — proof that a Po’ Boy can outshine any burger on the block.

Taste the legend. Feel the flavor. Laissez les bons temps rouler!

Why Mondays = Red Beans & Rice in the South.
In Louisiana, Mondays used to be wash day — the day folks scrubbed clothes, cleaned the house, and caught up from the weekend. With all that work, nobody had time to stand over a stove stirring complicated meals. So families needed something cheap, hearty, and able to simmer low and slow while chores got done.
Enter: Red Beans & Rice.
They’d toss red beans, seasoning, sausage or ham bones into a pot, let it bubble all day, and by dinnertime… magic.
A bowl of creamy beans, smoky flavor, and fluffy rice that tasted like comfort and home.

Over generations, that simple practicality turned into a beloved Monday ritual — one that still lives strong across the South today.

And if you haven’t joined the tradition yet… don’t wait another Monday.

At Nola Roux Cajun Eatery, our red beans & rice is cooked the same way: slow, soulful, and packed with Louisiana flavor.

Make your Monday taste like history — and happiness.
Come grab a bowl today and be part of the tradition.

A bowl of jambalaya has this magical, mood‑lifting power —there’s something about that steamy swirl of smoky sausage, tender chicken, ham, and rice soaking up every last drop of Cajun love that just hits different. One spoonful and suddenly the world feels warmer, louder, friendlier — like the rain outside is just background music for your personal little celebration.

It’s the kind of comfort that wraps around you like a worn‑in hoodie.
The kind that says, “Hey, you made it through today. Sit down. I got you.”

And it’s not alone in the comfort‑food hall of fame.
Sometimes it’s a big ol’ scoop of mac ’n’ cheese, all gooey and golden, making you feel like life might actually be okay after all.
Or a bowl of red beans & rice, slow‑cooked so good it feels like somebody prayed over it.
Or that warm slice of cornbread with the crispy edges that makes you close your eyes smile a little.

On a gloomy day, that bowl isn’t just food.
It’s a mood reset.
A tiny celebration.
A reminder that flavor can fix almost anything.
