This weekend, Chef Vilis will be preparing a refreshing cold summer soup made with beets, cucumber, potato, and kefir, topped with fresh dill and boiled eggs. Although not a Scottish dish, we're excited to honor our sous chef's Latvian roots with a traditional Eastern European delicacy.

This delicious Aberdeen Black Cod dish is one we are confident you will not find anywhere else.

Sourced from the deepest, coldest parts of the sea, the black cod has a rich, buttery flavour and a delicate, flakey texture. It's topped with a herb bread crumb and baked to perfection, then finished with a tangy roasted red pepper sauce made with tomatoes, garlic, and hazelnuts.
