I think I finally get how a painter feels when they step back from a finished piece.

Taking a brisket from a rough, beat up looking cut and shaping it into something clean and ready for the smoker makes me happier than it probably should. Every bit of fat trimmed, every edge squared off. If you live in the details, you know exactly what I mean.

Call me weird, but this part never gets old.

Today’s the day! We are at Carlson Orchards from 11-6 pm or until sold out!

It’s pick-your-own peaches and ginger gold apples today, along with flower picking! Their hard c***r barn will be open to enjoy a nice drink on their beautiful orchard.

Make sure to come early and enjoy yourself. It’s going to be a nice day ☀️

You have to love the process to get the results. Brisket is the ultimate litmus test in barbecue. It will never lie to you. Every shortcut you took, every hour you rushed, every call you second guessed shows up on the cutting board.

We will be at Carlson Orchards tomorrow, Sunday August 23, 11 to 6 or until we sell out. Full menu ready to roll!

We sold out at Nashoba Valley Winery, Orchard and Restaurant yesterday, so come early if there’s something you have your heart set on.

Rain is in the forecast, but the c***r barn will be open and pick your own is still on. Grab a plate, grab a hard c***r, and stay a while.
