This Pumpkin Spice Coffee Crumb Cake went to my grandmother’s birthday group luncheon this week — her request, and my birthday gift to her. 🩷🎃

This version got a little extra love with pecans mixed into that cinnamon crumb topping, and I may be biased… but fall baking is really showing off right now. 😂

🍂 JAYBIRD FALL BAKE DROP — SATURDAY, OCTOBER 17 🍂

Y’all have officially talked me into it. 😂🤎 The Jaybird Fall Bake Drop is coming Saturday, October 17, and preorders are open!

I’m doing a limited Fall Bake Drop with a few cozy Jaybird favorites, and I’m keeping this first one intentionally small.

Preorder to guarantee your treats, and I’ll have a small number of extra items available on pickup day. Once the extras are gone, they’re gone!

• Full loaf — $18

📍 Pickup: Saturday, October 17 • 9–11 AM

A limited number of Bake Drop-only slices, half-dozens, and mini loaves will be held back for Saturday morning extras.

Soft pumpkin-spice cake, a thick cinnamon crumb topping, and a sweet glaze — my Pumpkin Spice Coffee Crumb Cake is one of those bakes that somehow turns “I’ll just have one piece” into… well, you know. 😂

My favorite feedback from the Chocolate Peanut Butter Pie Cake Slices was hearing over and over that they were rich and flavorful without being too sweet — exactly the balance I was hoping for. 🥹

Lemon Bar, but make it cake. 🍋💛

Bright lemon cake baked over a buttery shortbread cookie crust, layered with tangy lemon curd and finished with smooth vanilla buttercream.

I originally made this one for my own birthday because it was exactly what I wanted — and after tasting it, I’m officially keeping the vanilla buttercream. It gives the tart lemon curd the perfect balance without making the whole cake overly sweet.

Yes, I made my own birthday cake. 😂🍋 And no, it’s not because no one offered — my mom absolutely did a thousand times. I just genuinely wanted THIS cake.
