Same fruit. Different paths. Remarkably different coffees.
Before coffee is roasted, brewed, and poured into our cups, it must first be transformed from a fresh coffee cherry into a stable green seed. How producers manage that transformation can have a meaningful influence on sweetness, acidity, body, aroma, and clarity.
Washed, natural, and honey processing each take the coffee cherry through a different journey after harvest - changing how long the fruit remains in contact with the seed, how fermentation unfolds, and how the coffee is dried. In our latest TA·ZA Journal article, we explore these three processing methods, the role of fermentation and drying, the Colombian context behind them, and why careful post-harvest decisions matter so much to what we eventually experience in the cup.
Origin creates potential. Processing helps shape its expression. Roasting should reveal it.
