Every single time my mom pulls apart our sheeter (easily the ONE thing you need the most at a pizza restaurant) for “routine maintenance,” I prepare for the worst. Will she get it back together in time? Will it even turn on when she’s done? Will we be hand-rolling 200 pizza crusts tonight? We never know.
The sheeter is approximately 50 years old, which means every time Tanya starts taking pieces off of it, I feel like I’m watching someone perform open-heart surgery AND she has absolutely NO fear. Meanwhile, I’m standing six feet away asking things like, “Are you sure you should do this right before we open?” Like we’re 20 minutes to open and you have 20 pieces of our most prized possession scattered all over our kitchen?! But, against all odds… she gets the damn thing put back together and it surprisingly turns back on.
As she was finishing it up today, she whispered to it softly “You’re gunna run like a dream today, baby” and that she is. WE ARE OPEN 11AM and 1:30 TODAY! 🎉
