This is pelau.

Pelau is a one-pot rice dish from Trinidad and Tobago made with caramelised chicken, pigeon peas, coconut milk, and a holy trinity of fresh herbs and spice that no recipe has ever quite captured correctly. Every Caribbean grandmother has her own version. Every version is the right one.
The name comes from the Persian "pilav," carried across the Atlantic through trade, colonisation, and the movement of people across centuries. By the time it reached Trinidad, it had become something entirely its own.
It's a dish for celebration. For Sunday. For feeding a crowd that loves each other.
