One of our signature dishes at Tobalá, and one that holds a special place in our heart - Pulpo de Puerto.
 

This dish was inspired by Chef’s first visit to the coast of Oaxaca. The star of this dish is the salsa de chicatanas.

Chicatanas are particularly special because they are harvested only during the rainy season and hold significant economic importance for the people of Oaxaca.

Incorporating salsa de chicatanas into Pulpo de Puerto not only celebrates the rich culinary traditions of Oaxaca but also honors the cultural heritage and sustainable practices of the region.
