Chipotle Butter Basted Sugar Toads

“Sugar Toads” are a regional culinary name for the northern pufferfish (Sphoeroides maculatus), a small, prickly fish found in the bays, estuaries, and coastal waters of the Mid-Atlantic United States and the Chesapeake Bay. Despite their bumpy, toad-like appearance and ability to inflate when threatened, they are not amphibians. Unlike exotic pufferfish like Japanese fugu, the northern puffer’s meat is completely non-poisonous and safe to eat.
The taste and texture of Sugar Toads is sweet, clean, and flaky white meat often compared in flavor to a mix of delicate white fish, crab, or lobster.
“Chicken Wings of the Sea”: Sugar toads are typically skinned, headed, breaded, and deep-fried whole on a single central bone.
