A note from our production manager, Savannah:
Introducing Hayabusa, a collaboration with the North American Sake Brewery (North American Sake Brewery).
Back in June, we had the privilege of hosting our new friends from the NASB in Charlottesville for a collab brew day. We first heard of them after researching some places to check out in Charlottesville as part of our spring team outing. We were excited to tour a new facility that specializes in a craft so similar to and so different from our own, and by the end, the team collectively decided that it only made sense for us to brew something new together.
We really appreciate NASB’s commitment to making thoughtful, well-made beverages rooted in tradition and quality ingredients. That care felt familiar to us, and we knew that there was a lot we could learn from them. After some ambitious research and calculations, we purchased some of their sake rice and planned to cereal cook it in our pilot kettle. It all seemed fine until it very much was not.
Tragically, we burned the crap out of all 200 lbs. of the sake rice and had to completely start over. Fortunately, we had a backup plan, and even more fortunately, that one worked. Nevertheless, when our new friends came in for the collab day, they found a hot mess... and we’re not just talking about the burnt rice (kidding, we were still having fun).
They were such good sports about it all and found it hilarious. We did too. Thankfully.
So, after some extensive cleaning, we regrouped and started brewing.
What we made together is a rice l***r delicately dry-hopped with Tango, a newer hop varietal, grown at an organic farm in the German Tettnang region. We went in real light with the dry-hop, looking to eke out a very subtle hop character, and it turned out quite nice! It has a little more hop bitterness than you might expect from a rice l***r but still drinks light and incredibly refreshing.
The brew day may have been a total nightmare, but the resulting b**r is one we are very proud to share. We taste notes of lime zest, water cracker, green tea, light jasmine, and a touch of lemon rind.
On draft at all locations, along with $13.50 16oz 4pks to go.
Cheers! 🍻
