As someone who used to catch crickets around unexploded bombs, this was a full circle moment for me.

I lost a relative trying to recycle one of those bombs for scrap metal. That reality is still very real for many families in Vietnam.

This week, I had the honor of looking into the eyes of Jerilyn Brusseau — the founder of Peace Tree & one of the kindest people I’ve met, who has spent decades clearing bombs and saving lives through PeaceTrees Vietnam.

She’s helped make many land safe again.

Grateful we could host her at Anchovies & Salt. This one means a lot.

We wanted to bring Vietnamese culture to Seattle the right way - elevated, intentional, on the waterfront. And people still find something to say before they’ve even taken a bite.

We’re proud to be the biggest Vietnamese restaurant in the world outside of Vietnam. We don’t know what the future holds. But right now, in this moment, we’re proud to represent this city and this culture. And that’s enough.
