Why do I post reviews? Because I take pride in what we do. Catering is hard! Sometimes when an event is over, you’re just exhausted. Then you read a review like this and you know all the hard work was worth it.

No matter how many great reviews we receive, we’re always trying to improve. There are always new recipes to develop and ways to make our current recipes even better.

My goal with any recipe is simple: make something your guests will talk about.

One thing I never do is say we are the best. I’d rather let our reputation speak for itself.

So when I read a review like this and know we accomplished exactly what we set out to do, it’s very rewarding. ❤️

This past Sunday we catered a wedding for 100 guests in Big Bear, with one of the biggest wedding menus I’ve done in a while. 🔥

They wanted something for everyone: Texas Style Brisket, Pulled Pork, Turkey Breast for some of their guests, BBQ Jackfruit as a vegetarian option, Mac & Cheese, Jalapeño BBQ Beans, Southern Corn Casserole, and of course our Banana Pudding.

The very next day, they sent me this message. ❤️

“People were saying the brisket was the best they’ve ever had in their lives. Every single thing you served was extremely delicious.”

One of the most rewarding parts of catering is knowing you met the moment. A wedding is a big day, and with a menu this large, hearing feedback like this afterward makes all the work that goes into it worth it.

🔥 NOW OFFERING FAMILY-STYLE BBQ CATERING 🔥

This is something I’ve been wanting to offer for a while. We’re taking food truck catering to another level with a new family-style BBQ experience from our Smokehouse on Wheels.

What I really like about this idea is that we can feed more guests faster while creating an even better, more memorable BBQ experience.

Your guests come up to the truck and grab a loaded BBQ tray made for sharing, or we can do smaller trays for 1–2 guests. And let’s be real… this is the kind of BBQ platter you take a picture of before anyone is allowed to dig in. 📸🔥

Imagine a tray loaded with brisket, Georgia-style pulled pork, St. Louis ribs, and Texas-style sausage. Then we load it up with our best 4 shareable sides: mac and cheese, jalapeño BBQ beans, southern corn casserole, and pineapple slaw.

And of course… our banana pudding. BBQ sauce, bread rolls, and all the fixings.

Talk about a feast. 🔥

I really feel like this is something you just don’t see offered very often, and that’s exactly why we wanted to create it. We’ve done family-style BBQ at pop-ups in the past, but offering it from our food truck lets us take the whole experience to another level.

Each catering experience can be customized around your celebration, from the meats and sides to the size of the BBQ platters.

There’s no reason to go on a BBQ road trip. We’ll bring the BBQ experience to you. 🔥💨

The Fourth of July in Yucaipa was one for the books! 🇺🇸🔥
Events like this are always a guessing game. We cooked two meats. You make your best estimate on how much BBQ and sides to prepare, hoping people show up hungry. Then the line starts growing, and all you can think is, “Did I cook enough?”
We kept it simple with three menu items:�🥪 BBQ Sliders & Fries - Pulled Pork or Chicken. �🧀 Mac & BBQ�🍟 Loaded Rowdy Fries
The biggest hit was definitely the pulled pork sliders. They were perfect for sharing, and they sold fast! We even ran out of bread and had to have more dropped off just to keep the line moving.
Every meat, side, and dessert was made fresh right on our Smokehouse on Wheels, including our banana pudding. We forgot our regular pudding containers, so we improvised and served it in sandwich containers.
When the line is long, the last thing you want is to sell out. I’m happy we guessed pretty well, kept serving through the rush, and made it all the way to the fireworks.

This Thursday I’ll be at County Line Farmers Market in Yucaipa!

I’m pretty excited for this one. Back when Yucaipa had the Street Fair and the Iris Festival, I did events there for over 10 years. Since then, the only Yucaipa event I’ve done has been the Yucaipa Rodeo, so it’s really cool to be back for the Yucaipa market at Yucaipa Community Park.

My Smokehouse on Wheels is pretty big, but they’re letting me come out this week and there should be more future dates coming soon.

We’ll be serving up our most popular item, the Loaded Rowdy Fries, plus our mac & cheese with BBQ on top. And let’s not forget dessert!

First time catering with the food truck… and it just happened to be for 300 guests. 🔥

We had the honor of catering Costco’s Employee Appreciation event with our Smokehouse on Wheels, serving pulled pork, BBQ pulled chicken, jalapeño BBQ beans, and mac & cheese.

This was actually our third time catering for Costco, but the first Costco location to bring in the food truck. They found us because we’ve catered other Costco locations before, and they heard nothing but good things. That means a lot to us.

From drop-off catering to full-service events to rolling up with the food truck, we’re proud to keep building our reputation one event at a time. And one thing is for sure — whoever books this food truck for their catering is definitely getting the wow factor.

Thank you Costco for trusting Tom’s Smokin’ Hot BBQ Pitstop to feed your team. This was a big one, and the Smokehouse on Wheels showed up ready. 🔥

Thank you for having us out this weekend! Beautiful venue, great crowd, and an amazing experience.

Our Loaded Rowdy Fries were the #1 item again, and we SOLD OUT 🔥 Word traveled fast, and guests were also coming up asking for our banana pudding.

We also served BBQ plates with prime tri-tip, pulled pork, BBQ pulled chicken, mac and cheese, and jalapeño BBQ beans.

Biggest food truck the venue has ever had! We’ll be back.
