1. Spring Roll Wrapper
Ingredients
* 2 cups all-purpose flour
* ½ tsp salt
* 1 egg
* 2 tbsp vegetable oil
* ¾ cup water
* 2 tbsp cornstarch
Method
1. Whisk flour, salt, egg, oil and water into a smooth, thin batter.
2. Let the batter rest for 20–30 minutes.
3. Heat a nonstick pan over low heat.
4. Pour a thin layer of batter and quickly spread it into a circle.
5. Cook for about 30–45 seconds, until the wrapper is set but not browned.
6. Remove and stack with parchment between wrappers.
2. Dumpling Wrapper
Ingredients
* 2 cups all-purpose flour
* ¾ cup warm water
* ½ tsp salt
* 2 tbsp cornstarch
* Extra flour for dusting
Method
1. Mix flour, salt and cornstarch.
2. Gradually add warm water while mixing.
3. Knead for 8–10 minutes until a smooth dough forms.
4. Cover and rest for 30 minutes.
5. Divide into small portions and roll each into a thin circle.
6. Dust lightly with flour and stack until ready to use.
3. Wonton Wrapper
Ingredients
* 2 cups all-purpose flour
* 1 egg
* ½ tsp salt
* ½ cup water
* 2 tbsp cornstarch
Method
1. Combine flour, salt and cornstarch.
2. Add egg and gradually mix in water to form a dough.
3. Knead until smooth, about 8 minutes.
4. Cover and rest for 30 minutes.
5. Roll the dough very thin.
6. Cut into small squares, approximately 3–4 inches wide.
7. Dust with cornstarch to prevent sticking.
4. Samosa Wrapper
Ingredients
* 2 cups all-purpose flour
* ¼ cup oil or ghee
* ½ tsp salt
* ½ tsp ajwain (carom seeds)
* ½ cup water
Method
1. Mix flour, salt and ajwain.
2. Add oil or ghee and rub it into the flour until crumbly.
3. Gradually add water and knead into a firm dough.
4. Cover and rest for 30 minutes.
5. Divide into portions and roll each into a thin oval.
6. Cut each oval in half and use to form samosa cones.
7. Fill with your preferred filling and seal.
5. Tortilla Wrapper
Ingredients
* 2 cups all-purpose flour
* ½ tsp salt
* ½ tsp baking powder
* 3 tbsp oil
* ¾ cup warm water
Method
1. Mix flour, salt and baking powder.
2. Add oil and mix well.
3. Gradually add warm water and knead into a soft dough.
4. Rest for 20–30 minutes.
5. Divide into 8–10 balls.
6. Roll each ball into a thin circle.
7. Cook on a hot dry skillet for about 30–60 seconds per side.
8. Keep covered with a clean towel to maintain softness.
6. Rice Paper Wrapper
Ingredients
* 1 cup rice flour
* ¼ cup tapioca starch
* ½ tsp salt
* 1¼ cups water
* 1 tsp oil
Method
1. Whisk rice flour, tapioca starch and salt together.
2. Gradually add water while whisking until smooth.
3. Stir in the oil.
4. Let the mixture rest for 15–20 minutes.
5. Heat a steamer and lightly oil a flat steaming surface.
6. Spread a very thin layer of batter over the surface.
7. Steam for about 30–60 seconds until translucent and set.
8. Carefully peel off and place on a lightly oiled plate.
9. Repeat with the remaining batter.
