Escazú Chocolates We are a Bean to Bar to Confection chocolate maker-chocolatier located in Raleigh, NC. We carefully source high quality cacao beans from Latin America.

Our retail shop and factory is located at 2409 Crabtree Blvd. 919.832.3433 We then, sort the beans by hand, roast in an antique roaster, winnow and grind in an antique stone grinder, to make the chocolate. We then temper it and hand ladle it into the molds to make our bars that are later hand wrapped. From the day we start sorting until the bar is ready to be on a shelf is an 8 to 10 day process, not counting aging time and from the sorting to the wrapping, our process is completely hand done. Our confections are made with our chocolate and local ingredients, we utilize Homeland Creamery Dairy, Big Spoon Nut Butters, Counter Culture Coffee... just to name a few.

Currently Scooping!!! Venezuelan Chicha is back and we have Tembleque, based on a Porto Rican dessert made with coconut, lime and cinnamon, it’s so so good, don’t sleep on it! Our sherbets are also delicious, plum-shoyu is a refreshing little number, a little sweet, a little sour and a little salty!

This or That, Flavored Latte edition with Karla, The Bean Queen! While we’re here, did you know that we make all of our flavoring syrups in house, from scratch?!?! Infused simple syrup with real ingredients, fresh herbs, spices, etc etc. We don’t buy it pre-made, we don’t use pumps. We have a recipe for each one based on how it tastes with the coffee. When there are two flavors it doesn’t mean we combine two syrups and do a pump of this and a pump of that. It means we made the syrup with those flavors already in it. Honey-Cinnamon Caramel, for example: Caramel made with honey, infused with cinnamon and then turned into a syrup, the same with Coconut Caramel. We put a lot of thought and care into our flavored lattes, just like we do with everything else we make.

Where do you get your chocolate from? When do you get your bonbon deliveries? Where do you get the ice cream from? Do you have anything that you make here? These are questions we have actually heard recently, sometimes from new customers and surprisingly, sometimes from repeat customers.
So, I thought that what better reason to show these beautiful pictures that Emily Bennett took during a photo shoot for Gateway Plaza Raleigh , than to remind you of what we do and the lovely people whose hands and hearts are involved in the process.

First and foremost, we are chocolate makers, this means that we start with raw cacao beans that we source exclusively from Latin America, and we turn them into chocolate right here, in the same space where you can purchase it and enjoy it.

While we love chocolate we also love love ice cream, and we love making ice cream, so guess what? We use local milk, cream, and as many local ingredients when possible, to make our French style ice cream and sherbets. Don’t worry, we also have dairy free options! And, while we’re at it, we also make our waffle cones and all the mix ins and everything else that goes in and with our frozen treats.

If you are still reading, I will also tell you about our coffee syrups, because guess what?! We make those too, all of them, with real vanilla bean, fresh herbs from our own garden or the farmers market and house made concoctions that we dream about and test.

So, long story long (honestly, it can be a lot longer) WE LOVE TO MAKE GOOD FOOD! And we make everything we possibly can, even if it takes longer or the ingredients are more costly.

We believe, just like my abuelas believed, that good food, made from the heart, with care will bring a smile to your face and heal your heart a little and I believe that is part of the reason why I starting cooking professionally almost 30 years ago. I love making food, I love what we do and I wouldn’t want to do it any other way!

When I was a kid, I remember discovering bubblegum ice cream at an Ice Cream shop in Bogotá, Colombia. I had never seen it before, we didn’t have it in Venezuela. Later on, I came to the US and I tasted it here, I just didn’t like it , it was too sweet and too… weird. I became an adult, with culinary knowledge and a more refined palate. So when I was approached by the team to make bubblegum Ice cream I told them; if we can figure out a way to do it with natural flavors and not have it be fake and weird, we’ll make it… they quickly came back with an answer and as I looked for ways to make it work with our recipe, I found a recipe by Dana Cree from pretty cool ice cream and I said, if Dana Cree makes it, we make it… So we took the ingredients that make it taste like bubblegum and made it with our custard ice cream recipe. So, if you are a bubblegum ice cream lover, come and get it!!!!

Happy Friday!!! Lately, I have been thinking about how lucky I am to come get to come to work with my friends, to make big decisions, to grow, to celebrate and to grieve with them. So I decided to pay a little tribute to the partnership that makes the backbone of Escazū.
It is crazy to think that 18 years ago Tiana came into Escazū to enjoy our chocolate as a customer, 12 years ago she came into Escazū as our employee and 8 years ago I chose her as my business partner… With her, we have had some hard times; like a little pandemic, a volatile cacao market, a 30% rent increase and a few other not fun things, with which we have pivoted, learned, pushed, taken chances, worked very hard, cried sad tears and cried happy tears. Through all of it, we have also had fun, grown as bosses, as people, as friends and as business partners.
I hope you enjoy a little bit of the many pictures I have of our Escazū adventures through the years!
