Citrus Mont Blanc - an unconventional take becomes a new iris classic.
The earliest flavor development think tank sessions for the winter menu was dominated by one thought only - how do we break the typical seasonal menu mould? As you’ve likely noticed, in years prior, we have followed a simple format for our seasonal bar menus: three drinks from most to least approachable. The third and final drink of the three was often a tonic or matcha seasonal - with us following this suit for years. However iris has rightly earned, through your generosity, the quite the reputation for evolving when others stagnate - we knew we had to maintain this notion with our winter seasonal menu. Thus of the hundreds of ideas their earliest beta runs, some concepts were promptly saved for a later day-others we’d be embarrassed to even mention in hind site - our nostalgia for our last year end seasonal of European winter citrus found us once again crafting an experience based on southern Italian bergamots, lively oranges and plump grapefruits. The Citrus Mont Blanc begun to show its face amid the dozens of iterations.
Different at its core from anything we’d traditionally serve, its built upon a scaled up slayer shot of espresso, pulled past 30 seconds with a 1:2 ratio of preinfusion to extraction for a sweeter and less acidic shot to be married to an icey nod of traditional Mont Blanc’s through a bouquet of winter citrus fruits. Lively orange fruit, fresh grapefruit find synergy with the slayer style shot to offer a foundation both aesthetically but also experientially for the iconic topper - done in iris fashion with miso, peppercorn and southern Italian bergamots - marrying the two halves in total harmony while remaining equally enjoyable - meaning it can be enjoyed stirred or not stirred. The experience for us closes and for you opens with a charred rosemary stem, flash roasted to only ignite the surface oils of the stem for warming and rounding aroma allowing the tastes of citrus to unfurl themselves than smash their way to nasal passages and palates. The experience comes together for a take on an industry classic only iris could produce. Available daily.
