Try one of the classic’s tonight — the Chicken Tawook!

Marinated Joyce Farms boneless chicken thighs grilled over charcoal and tossed in a preserved lemon, onion, and Castelvetrano olive “tare”. Served with toum, pickled watermelon rind, sumac onions, olives, and cilantro. A little smoky, a little tangy, and really good! And it’s dairy free!

Every whole trout on our tables begins its journey in the mountain waters in Andrews, North Carolina where a family operation raises these fish!

We marinate each (deboned) fish in a thick, herbaceous yogurt that seasons the fish from the inside out and helps our gluten-free rice flour coating crisp up beautifully in the fryer. Cooking it whole keeps everything tender and flavorful.

Then we gild the lily with the sauces. A bright, green schug brings freshness and heat, while the tart and sweet tamarind sauce holds special distinction as the menu muse before Ajja was a reality. 🧡

While developing the menu before we opened, Chef Cheetie came across a Palestinian tamarind sauce recipe finished with dried fenugreek leaves. The ingredients were deeply familiar- identical to what her Punjabi mom might have used.

That recipe helped shape the Ajja menu.
It is a reminder that food has always traveled with people, picking up new ideas, new neighbors, and new traditions along the way. Migration has always enriched our food, and we’re grateful to cook in that spirit every day! ❤️

House tear n’ eat bread is served with our Whipped Chana Hummus

Made with split and peeled black chickpeas, cooked with aromatics and blended with fresh lemon juice and extra virgin olive oil until silky smooth. No tahini, just the natural flavor of the chana, richness from the olive oil, and plenty of lemon to keep it bright 💛

Slow-Roasted Shrimp 🦐

Slow-roasted NC shrimp with Beluga lentils, Baharat, and our XO-style sauce built on salt-cured scallops. Nduja butter adds smoky umami, while crispy tortilla crumbles bring an unexpected crunch!

The Tahini Ice Cream! 🍨 🫐

A classic ice cream base, made in-house, with tahini for a richer, creamier mouthfeel. We’re stocking up on blueberries before they disappear, roasting them and folding them through the ice cream. The combination has a subtle nostalgia to it (somewhere in the territory of a pb&j)

At the bottom of the coupe is a swipe of brûléed “marshmallow fluff” made from salted Swiss meringue (with gelatin). Two scoops of ice cream, 4+ ounces, topped with sesame brittle, candied orange peel, Moth Dance Farm (Jason+Ami) ’s opal basil, mint, Maldon, and arby.
