The slopper is an open-face cheeseburger drowned in Pueblo green chile, and it is the single best argument this town has.

Gray's Coors Tavern is where it peaks. Old-school sports bar, memorabilia on the walls, a schooner of Coors with your slopper, and a patio that stays busy because the regulars never left. The Regular Slopper is the order.

Pass Key loyalists will read this and throw their phones. The Super Special grinder, three cheeses, a Pagano family operation going back decades. I get it. That's the best sandwich in Pueblo. But this ranking is about the crown, and the crown is the slopper.

Brues Alehouse takes the brewpub version in the old jailhouse on the Riverwalk. La Forchetta is the date-night Italian counterweight, handmade pasta and all.

A slopper is what happens when a burger stops pretending it can be eaten with your hands. Tell me the order is wrong.

Today’s Special: Mald’s Chili Patty!

A patty melt with Pueblo green chiles and mustard, grilled up on Texas toast and served with your choice of French fries or chips.

This one is extra special to us. Mald’s Chili Patty is named after our former employee and friend, Donny Maldonado. Donny was such a loved part of the Gray’s family, and we miss him dearly. This was one of his favorite sandwiches, so we named it after him as a little way to remember him and keep his memory with us.❤️
