What a gorgeous day we had today! ☀️
I opened windows early this morning for some fresh air, little guy & I put some miles on the bike (what a beautiful city we have!) AND I tried a new cookie recipe!

These cookies won’t win a beauty contest, but dang… they’re delicious!They’re packed with pretzels, toffee pieces, chocolate chips & m&m’s! How can that combo be bad?! Add in the sprinkling of salt on top and these fellas are the perfect combo of sweet and salty 🍪

This dough was stiffer than my normal go to and I was concerned they’d be dry. But how wrong I was! They baked up with a slightly crisp edge and soft center, gooey chocolate and crisp pretzel pieces— oh and those toffee pieces slightly melted and give the cookie such rich flavor.

The only thing I’d change? (Because I can never not tweak a recipe 😅) is next time I’d cut back a smidge on the chocolate and add extra pretzel pieces. (Shocking for a chocoholic like myself 😂). Something about those crisp pretzel pieces encased by buttery sweet dough… I just need more of those 😆 Even my hubs— who admittedly doesn’t eat a lot of sweet treats— loved these cookies and the pretzels in them. I think that means they’ll be added to the Buttercream menu officially 😉

What’s your favorite no bake treat in the summer? Is it an apple & caramel dip? Ice cream or popsicle? Rice Krispie treats? Classic “no bake” cookies?

I LOVE Scotcheroos! I loved them as a kid and that love has continued well into adulthood. A couple years ago, I tinkered with a recipe for them that was very different than my go to. But y’all… that tinkering turned out amazing and that has been my tried and true go-to recipe now! I mixed up a batch (okay… confession… this is actually 3 recipes worth in a 12x18” pan 😳 I plan on sharing these and wanted a big ol’ pan to share from) but this time, I added a sprinkling of flaky sea salt on the chocolate. I love the addition it brings to all the sweetness… it’s all a balancing act. Speaking of salt and how it balances out sugar—and getting waaay off topic— add a little sprinkle of sea salt on top of your warm cookies next time or that hot caramel sundae.. you won’t be disappointed 😉

We celebrated my little guys birthday this weekend. Our theme was Toy Story— which by the way, I love that I enjoyed Toy Story as a kid and now my kiddo is enjoying it too!

We had a full meal as usual and of course dessert was a buffet too 😅 Dessert is just as important— if not more— than the actual meal in my opinion. Sadly, I didn’t get a picture of the dessert table (or the food table). But in case any of y’all are having a Toy Story party, here’s our dessert round up:
-cupcakes (vanilla & chocolate, decorated like the aliens & toy soldiers)
-Jessie’s Hay Bales (Rice Krispie treats)
-Buzz’s cosmic cookies (sugar cookies& chocolate chip funfetti)
-Lotsa-Bears (teddy grahams with chocolate chip cheesecake dip)
-There’s a Snake in my Boot! (Chocolate mousse cups with a gummy snake)

And of course the birthday cake. This is a 3 layer, 6” chocolate cake with buttercream. I fell in love with this cake; some fun sprinkles & simple piped clouds made it quick to decorate. I added the figures and it was ready to go! I love when a design is quick to execute and is still adorable ☺️

I missed baking for the market this past week, but don’t worry— my nephew kept me busy in the kitchen 😅

He loves to be in the kitchen with me and asked if we could make bread; he’d never made bread and wanted to learn. We started basic with some yeast breads. He eventually wants to learn sourdough and I promised him we would do that too sometime.

We had a busy week that consisted of cheese bread, cheddar & bacon bread, mozzarella & pepperoni bread… then ended it on a sweet note: crunchy cinnamon bread braid (with homemade vanilla bean icing too!). His favorite was bacon cheddar… until he tried that cinnamon braid. Then that became his favorite and poor bacon cheddar got pushed to second place 😆

This kid knows the way to my heart: baking and carbs 😍🤣

These are toffee turtle brownies and I’ll have them at the Princeton Farmer’s Market tomorrow starting at 8:30!

If a soft, chocolate chip studded brownie topped with a layer of thick homemade caramel, chocolate buttercream frosting, pecans and Heath toffee pieces doesn’t sound good… don’t worry— I will also have the following too:

**please note: this Saturday, July 25th, is my last scheduled market day. I have other events coming up in August with xan dandy cotton candy co. that you can catch me at. Okay y’all, this is 100% not dessert related, but thought I’d share anyways.

It’s grilled meat-baked beans-pasta salad season. I don’t like mayonnaise so I’m not a pasta or potato salad fan. Except for this pasta salad. This recipe comes courtesy of my hubs family. Enjoy!

Bow Tie Pasta Salad:
1 (16 oz) box bow tie pasta (I used mini but you can use regular too)
1 cup vegetable oil
1 cup sugar
3/4 cup white vinegar
2 packets Good Seasons Italian dressing mix (note: it’s cheaper to buy the box that has 4 packets in it)
8 oz block cheddar jack cheese, cubed (or whatever kind of cheese you want)
1 bag (2.5 oz) bacon bits
Cherry tomatoes
Broccoli florets (fresh)
Carrots (I use the shredded ones)

Boil you pasta to al dente & rinse with cold water. Set aside to drain. Slice your tomatoes in half and chop up broccoli florets. Toss the pasta, veggies, cheese & bacon into a very large bowl.

In a small bowl, whisk together oil, sugar,seasoning packets & vinegar. Pour over pasta mixture & stir to coat. Cover and refrigerate. This is best when made a few hours in advance. I also stir mine a few times throughout the day before serving to make sure everything is marinating in that dressing well.

Add how much veggies or whatever kind you like — it’s totally customizable! Yum!

If you’ve been with me since the beginning many, many years ago, you remember that I began by selling cupcakes & cookies at the market. I love cake. Cake is my jam! Specifically chocolate cake, but any cake is general I would eat.

I don’t sell cupcakes currently because they take longer to make (and my time is limited with my special needs little guy). But cake still has my heart ❤️

I have my staple chocolate cake recipe that I know by heart and could make in my sleep. But I stumbled across a chocolate cake and frosting recipe I wanted to try out. This cake not only takes buttermilk, but also some vegetable oil. The layers are super moist and soft! a

The cake layers & frosting both use Dutch processed cocoa powder for that deep chocolate flavor, but the frosting also took melted dark chocolate. Normally I’d grab a couple Ghirardelli dark bars, but I had a bag of Hershey’s special dark chips in my cabinet. The Hershey chips are sweeter than a Ghirardelli bar & I liked that idea because the frosting didn’t have much powdered sugar in it. The frosting also has sour cream in it… yep, sour cream. You don’t taste it; It just adds some fat, a little tang and creaminess.

I did freeze my layers a bit to make them easier to frost (highly recommend doing this) and I was slightly panicking because I wasn’t sure I’d have enough frosting to cover the whole cake. I did though. And is she magazine picture worthy? Nope. Is she a little rough around the edges? Absolutely. But this is real life when I’m making cake at 3:30 in the morning because my little guy rises before the roosters 🤪

The cake is now resting in the fridge and we will slice into it tonight. I’m interested to see how it compares to my go-to recipe 🤔 I know it will be delicious though!
