Y’all ever want the cookie dough without the actual cookie? 🙋🏻♀️ Yep me too.
If you’re looking for a delicious no bake treat, check out this browned butter cookie dough.
(And if you’re feeling really fancy… you can use mini chocolate chips & chopped pecans in the dough, scoop it into balls, toss into the freezer for a bit and then dip them in melted Ghirardelli chocolate. And voila! You just made chocolate chip pecan cookie dough truffles 😉 )
Browned Butter Edible Cookie Dough:
1 c butter, browned (see below, I use salted butter)
1 1/4 c lightly packed brown sugar
1/4 c sugar
1/4 tsp salt
1/2 tsp baking soda (yes i know we aren’t baking this dough, but it adds to the flavor)
1 2/3 c heat treated flour (see below)
1 c mix ins (chocolate chips, M&m’s, nuts, etc)
Add your butter to a sauce pan and place over medium high heat. Stir occasionally until butter is amber in color and you have some browned bits in the bottom of the pan. Mine took about 6-7 minutes roughly. Pour the hot butter into a bowl, making sure to scrape all the browned goodness from the pan. Place the bowl in the fridge or freezer to let it set up. You don’t want the butter hard, but like a room temp softened butter consistency.
While the butter is cooling, heat treat your flour. Spread flour onto a parchment paper lined cookie sheet. Bake in a 350 oven for about 5-6 minutes. Alternately, you can also put flour into a microwave bowl & microwave for 45 seconds, stir, then another 45 seconds. Ideally, we are trying to get the flour to 160 degrees to kill any bacteria. If you use the oven method, I’ve found the flour doesn’t clump; if you use the microwave method use a whisk or sifter to get the lumps out of your cooled flour.
Once butter is cooled, cream it together with the sugars, vanilla and salt. Then add baking soda & flour. Stir well to combine. Add in your choice of mix ins (and feel free to measure with your heart 😆). NOTE: If your dough is too thick, add a tablespoon or two of milk to it.
Refrigerate any leftovers (I mean, is there even any leftovers? This is sooo good!)
