Need a dinner idea for later this week? Try Baked Dijon Salmon!
And make sure you stop by the store or the farmers market this week for some delicious salmon fillets.
Ingredients:
1 pound of Salmon
¼ cup melted butter
3 tbsp Dijon mustard
1½ tbsp honey
¼ cup breadcrumbs
(optional) ¼ cup finely chopped pecans
parsley, Salt and pepper
Directions:
1) Heat oven to 400°F.
2) Mix melted butter, Dijon mustard, and honey.
3) In another bowl, mix breadcrumbs, pecans, and parsley.
4) Season the salmon lightly with salt and pepper.
5) Brush the tops generously with the honey-Dijon mixture.
6) Sprinkle the breadcrumb mixture over the top.
7) Bake for 12–15 minutes, until the salmon flakes easily (or to your liking - USDA recommends 145°F internal temperature)
