a long time ago, a few good friends built out and created . I took an old paper delivery truck and former Beech Ridge Motor Speedway service van and turned it into a Cambodian food truck for a good friend. I created the kitchen and she created the menu, running it for numerous seasons in the greater portland area. Life shifted gears and she parked the rig as I sold mine. This past year, my good friends Josh and Yunhee of S**o decided that they wanted to give it a go. They called me to brainstorm, and I mentioned that I may know of a great rig to scoop up to cut their teeth with. They struck a deal and over the last few weeks, they've curated a menu that pulls from Korean cuisine and created K-pop Kimbap which will soon be visiting coastal maine events, breweries an street festivals!

Today was their soft opening in their neighborhood in S**o. I gave them a hand frying up scallion and kimchi pancakes. It was great to be back in a food truck for the first time since I shut mine down and sold it off. It was certainly nostalgic, that's for sure.

It's Christmas time, and I've decided to part ways with these accounts on Facebook and Instagram. I've kept them long enough! Over the next few weeks, you'll hear a different voice from SaltBoxCafe Maine as it shifts into K-Pop Kimbap and Josh and Yunhee take over these accounts- my gift to them as they break out into the food truck scene.

If you're a customer of mine, seek them out! If you're a vendor or catering client ive serviced, give them a call! I've sat at their table numerous times and if you're seeking some incredible Korean tastes, this addition to the Maine scene isn't one to be missed! send them a message with invites for your events!

bringing a dream to life is an enormous challenge. choosing to change gears and direction is as well. finding someone with a similar dream to carry yours forward while bringing theirs to life is an even harder task. I've succeeded all three of these tasks and is up to the task to keep this little kitchen running for years to come , even serving slopeside at like I originally intended. give them a follow and if you're at Stowe this winter (or exploring Burlington VT) grab some poutine!

Six years ago today, this little kitchen was being built from culled lumber with borrowed dollars and hands in a garage (on loan) at my work on Union Wharf. For five years, she's been dragged all over Maine for birthdays, wedding receptions, corporate gatherings, weekend brunch services on the promenade, concerts, art walks and festivals. tomorrow, she will begin a new journey, one without me steering the wheel.

In the last year, I've spent a LOT of time thinking about what the next five years of my life will include. the last five years have been a whirlwind - never in my wildest dreams would I have thought that a business such as the one I'd imagined would be so rewarding, both with the income it has allowed me to earn, but the community I've discovered within Portland and the dedicated customers who have returned year after year when we've opened on the promenade each and every spring, sharing their daily lives, stories, joys and even struggles over the last five years of public service.

Over the last two years, I've struggled with the concept of moving on from this business. it seems silly to close up shop and move on to something else, especially with such an overwhelmingly successful venture as this opportunity has been, but over the last two seasons, I've come to the conclusion that The SaltBox Cafe is simply a few steps in the progress of my career. There are so many things I wish to attempt and accomplish in this short span of time we have to live, and, the time for Matthew to start his "next big thing" is now.

if you frequent Burlington, Vermont, make sure to seek out and say hello to this tiny house food truck if you spot it on the snow this winter.

why is the city charging hundreds of dollars per game? is the city somehow obligated to collect a local tax on pinball games? how do these regulations make ANY sense or productively enable small businesses to remain in this city? 👎👎👎👎👎👎

due to unforseen circumstances, we will have a delayed opening on the promenade this morning (10am)

apparently has refused to close the street for runners during a 10 miler this morning, forcing the promoters to purchase FIFTY parking spaces from Ft Allen Park to North St in order for their runners to safely manage their route. no notification was provided by the city, we only caught wind while signs were being hammered into the esplanade. promoters asked for a temporary road closure to safely operate their course. they were denied and forced to purchase (non metered, FREE) spaces. it's currently dotted with weekend parking, boat trailers, etc. I'd hate to see someone have to maneuver these obstacles in what should be an ADA safe course.

all food trucks have removed themselves for the duration as runners safety is ALWAYS more important than our service schedule.

This is a PRIME example of how the city's failure to provide communication (via a liason or mobile foodservice manager) has yet again resulted in specific businesses being lost in trying to navigate their own ability to have routine setup for their customers.

There are only two other places in the City where food trucks can legally operate. what are these licensed businesses to do when the city's "leadership" 100% leaves these businesses to fend for themselves?

These are the late summer mornings we Mainers dream of, aren't they? cool enough for hot coffee in the morning with an iced drink in the afternoon!

today is a special day for ME, as I have the gift of having my father (the guy who showed me how to run a food cart on commercial street) cooking next to me this morning! come and see us between 830-2pm!

TODAY is the only weekend day we will be here this week, as we're celebrating love with a wedding brunch tomorrow at Kingsley Pines!
