Red w**e braised beef, grilled onions and peppers, cheddar, and horseradish aioli.

The beef on the No. 4 starts with a classic French technique. After browning the beef to build flavor, it’s braised overnight in red w**e until it’s fall-apart tender. The cooking liquid and vegetables are blended back into the beef, making every bite rich, flavorful, and never dry.

Some classics don’t need reinventing. That’s why it’s finished with grilled onions, peppers, cheddar, and horseradish aioli.

Peak tomato season calls for a tomato appreciation post. 🍅

You’ll find our tomato jam on a few Devil’s Dill favorites, and there’s a reason for that.

Instead of using fresh tomato slices, we make our own tomato jam. It adds a rich sweetness to the sandwiches, works year-round, and helps us reduce food waste by preserving one of our favorite ingredients.

The No. 1 started long before Devil’s Dill.

When Chris and Gavin were living in Bloomington, they spent a lot of time barbecuing and experimenting with different rubs. While flipping through a barbecue cookbook, they stumbled across a recipe for a five-spice rub. They gave it a shot, and it was delicious.

It wasn’t your typical American barbecue flavor, and that was exactly what made it stand out.

When it came time to build the No. 1, they leaned into those flavors with an Asian-inspired sesame slaw and chili-garlic BBQ sauce. The result is a pulled pork sandwich that’s become a Devil’s Dill staple.

Back in 2013, we thought Portland deserved better late-night food. That idea became Devil’s Dill.

More than a decade later, we’re still here serving made-to-order sandwiches when the craving hits.
