Humbà, also spelled hombà, is a Filipinobraised pork dish from Visayas, Philippines. It traditionally uses pork bellyslow-cooked until very tender in soy sauce, vinegar, black peppercorns, garlic, bay leaves, and fermented black beans(tausi) sweetened with muscovadosugar. It also commonly includes hard-boiled eggs and banana blossoms

This month we’re excited to share the bounty and diversity of Filipino cuisine with 16 locations from Beaverton to Troutdale! “Sobrang Sarap” (meaning very delicious in Tagalog) Filipino Food Tour extends 25-miles and each stop will highlight a distinct Filipino ingredient every week in April. We invite you to learn through our stories and taste the food that honors the cultural and culinary heritage that define our community.

Week 2 is Adobo. Week 3 is Calamansi. Week 4 is Pancit. Each location below is serving up their rendition of the ingredient every week in April.
