FLAGSHIP SANDWICH HIGHLIGHT: The Porchetta. The undisputed king of Italian pork roasts. 👑

It’s the sandwich that is as much a part of the origin story of Lardo as Portland itself.

We de-bone a skin on hog middle and liberally season with salt, black pepper, fennel pollen, rosemary and garlic.

The skin is scored and then the whole beast is tied, rolling the belly around the loin. It gets slow roasted until juicy and tender and the skin is potato chip crispy.

The sandwich itself is an exercise in restraint - some toasted ciabatta, a little caper mayo, a handful of lemony dressed arugula and a blessing of Parmesan cheese.

Available on weekends starting on Friday and usually lasts through Monday. Come get it.
