We’ve been super busy over here at Morrison getting ready for Bears season and the return of NFL + college game days.

The menu is growing with more of the staples we love, including pizza puffs, Italian beefs, the Lower Wacker (“soggies” for my Midwest angels), chocolate chip cookies with rich vanilla ice cream and v5 of our dough for snappier and crispier pizzas (thanks to Ben for flying out and his week of dealing with my insane late nights and early mornings talking fermentation and how I can’t leave behind milk.. alas, it’s been overcome).

We’ll also have some special guest appearances from the buttermilk biscuit sandwiches that began, but quickly ended, due to size constraints at PROOF’s original Beaverton food trailer for those early game days.

Yep. They’re coming back! BISCUITS!! Limited runs and are solely for those mornings where the early birds bust out for door openings at 9 AM.

Add in the new cocktails, fun N/A drinks, new booth seating we’re installing next week, and Morrison is finally becoming the Chicago tavern we’ve been dreaming of ✌️

Staying true to Chicago taverns being built for the neighborhood..

We’ve got cold beer, no frills cocktails, elevated liquor menus, hand selected wine options that pair with our pizzas, and JELL-O SHOTS! Woot!

We’ve spent the last three months testing, tweaking and eating a whole lot of Italian beef here at the shop and back in Chicago. We finally feel like we’ve made one that tastes like what we grew up with back home.

Medium-rare round, thinly sliced and piled onto a 7” Turano roll, add melted mozzarella and our house giardiniera for full presentation. Served with a side of beef gravy carrying just a dash of salt, a pickle and your choice of Original or Jalapeño Tim’s Chips.

Get it dry, dipped or wet (baptized). And if you want even more house giardiniera, you can add a 4 oz side and pile it on yourself.

Come try one at the tavern. They’re available for dine-in, or yeah… we’ll let ya take one home if you order in person.

Cutting a pizza into squares is only part of the story.

Chicago and Midwest tavern-style is all about an ultra-thin, crisp crust made with lower-protein flour and minimal gluten slow fermentation for that signature crunch. Sweet sauce goes down first, then toppings under the cheese, all baked edge to edge so every square delivers flavor and toppings.

It’s the pizza from neighborhood bars and family tables where it was passed around with cold beers or RC Colas, everyone fighting for the corner pieces (don’t forget the sides of Giardinera, ranch, and packets of parm + red pepper!).

Our version stays true: sauce first, toppings under cheese, and a thin crust built for full-flavor bites in every square. Order sausage and you’ll get that classic fennel snap💥

We grew up on this back home, and now we’re sharing it with the PNW. This is tavern-style. This is PROOF!

We’re getting up early for BEARS FOOTBALL!!! 🐻⬇️
