I think this Miso soup may be my new favorite quick meal.

Freeze dried chickpea miso crystals with wakame and green onions. Super quick, organic, and makes an easy meal if you want to pair with rice, noodles, or veggies.

I have a friend visiting this week who is on a healing protocol that aims for 6 cups of vegetables per day. It’s been fun to feed her, and we’ve had the best time roasting, steaming, sautéing.

Pictured here is a fairly hyperlocal nutrient dense meal with cabbage ”noodles”, local lamb meatballs with japanese sweet potato, ginger, and cilantro accompanied by broccoli steamed with olive oil and local garlic, served with a Nomato Sauce from local carrots, beet, and ume plum vinegar.

Ume Plum Vinegar has a super power, did you know? It boosts the body’s pH and helps to alkalize the blood.

It’s Spring here in the Midwest, and the Nettles are the perfect height for eating and picking!

After a long winter, our digestive system could use a boost with months of heavier eating, richer foods, and slowed digestion. Accessing spring greens can kick start our bodies into some gentle detoxification while supporting and nourishing our digestive organs.

Nettles are also a nourishing tonic for kidneys, as well as our respiratory and reproductive system (also helpful for uterine tract infections). Nettles are also rich in magnesium, iron, protein, and calcium.

To obtain the greatest range of vitamin and mineral content, simmer your Nettles for 2-3 hours. This might be counterintuitive for those of us who are accustomed to steaming our greens, yet a longer simmer time will break down the cell wall, yielding a more digestible and nutritive end product.

Looking for healthy sugar free options?

I have a recipe share! These 3 ingredient dates are easy to adapt to your particular needs, and pair well with a whole foods or Paleo diet.

Ingredients:
Pecans
Medjool Dates
Chocolate Chips of choice

optional: vanilla extract, ground spices for garnish

Directions:
To prep the dates, use a butter knife to cut a small hole. Remove pit, discard. You may also wish to remove the brown tip at the top of the date where it was plucked from the tree. Insert two pecan halves (2 is better than 1!☺️), and smoosh the date together a bit to mold around the pecan halves.

Use a double broiler, and melt the chocolate chips. 1/2C chips yields approximately 16 dates. Once melted, stir in a smidge of vanilla or extract of choice. I used 55% cacao chips, and used a bit of raw honey and vanilla in mine.

Dip bottoms of prepared dates in the melted chocolate, and lay flat on parchment paper to harden. Garnish with rose petals, unsweetened shredded coconut, ground nuts, or coarse sea salt. Pictured is crushed cardamom and red rose petals. ❣️

Holy Ladle in Poncha Springs, CO closed its doors in November, and I've been taking care of life here in Fort Wayne, IN with a renewed commitment around my kiddos, and their wellness.

These are challenging times we live in, and they are also rewarding times. When I tap in, it all seems available. And that's ultimately my take away--the Thank You for the Opportunity.

Owning my own eatery/restaurant has been a desire for quite a long time. Only being in business for six months has also created an evolution in this desire, and I'm excited to create something New. It's brewing, percolating, and that's all I'll say for now.

What stands out to me the most is the support you all gave. The feedback for Holy Ladle and the core recipes/dishes was fuel for my heart, and fuel for my life. I'm back in Fort Wayne, and you’re still asking for my medicine chai, Persian Love Cake, and my medicines.

THANK YOU is what's resounding from my heart.

THANK YOU for lining up with the offerings.
