Bollito Misto!

This dish starts with a broth made from veal, beef, and chicken bones, aromatic vegetables and herbs which simmers overnight. Then we braised pork shoulder and chicken leg/thighs in the broth. We also roast a veal breast. Then all of these meats are simmered in the reduced broth together and served with some roasted cippolini, carrots, and potatoes. Finally a little salsa verde.
Lots of long cooking, skimming, waiting, patience, and care go into making this simple yet delicious dish.
