Ryan:
Because I think we’re about to have to mitigate.

Jason:
…what did you do?

Ryan:
Nothing.
That’s the problem.

Jason:
Ryan.

Ryan:
If we can’t get a straight answer…
if we can’t get the liquor license…
we can’t just sit here and bleed.

So I started looking at options.

What does your summer look like? A, B, C, or D?

Spring is right around the corner, and you can feel it — longer days, warmer nights, that first real breath of freedom after a long winter. For us, that feeling has always meant one thing: smoke in the air, trays stacked high, people gathered around tables, laughing, lingering, living. Barbecue isn’t just food — it’s a season, it’s a mood, it’s how summer is supposed to feel. And we are getting more excited by the day to bring that feeling back.

Things are moving. Plans are taking shape. Fires are going to be lit. Legendary barbecue is coming back into the world, and it’s going to look like something out of these pictures — friends, drinks, music, plates piled high, and that slow-smoked magic that only happens when everything lines up just right. Jason:
Fine. Go.

Ryan:
Picnic tables. Actual ones. Outside.

Jason:
People sitting down instead of hovering like raccoons.

Ryan:
Cold beer.
A glass of Minnesota wine.
Maybe a craft cocktail that takes itself seriously.

Jason:
Live music drifting in from somewhere nearby. Not too loud. Just enough.

Ryan:
Paper trays.
Sauce on forearms.
Napkins that never stood a chance.

Jason:
Someone says, “This is the best part of summer,” and nobody argues.

Every once in a while, we get a message that stops us in our tracks. Our friend who is visiting in North Carolina — barbecue country itself — wrote to say that after trying brisket and chopped BBQ at a wildly popular spot, all they could think was: “You guys have ruined me for good BBQ.” Moments like this never stop amazing us. To know that Junior’s No. 19 Barbecue has set the standard high enough to change how people taste barbecue across the country… that’s humbling, moving, and exactly why we do what we do.

We hear stories like this often, and every single one reminds us that our craft matters. We look forward to many more years of smoking, slicing, and serving barbecue that makes people rethink what’s possible. Minnesota, stay tuned — we’ve got some exciting things on the horizon. See you soon.
