My lunch today...

Cobb Salad

Ingredients:

1/2 romaine heart, chopped
2 pieces bacon, diced, cooked
1 scallion, sliced
1 tomato, diced
1 hard-boiled egg, diced
1/2 avocado, diced
1/8 cup whole kernel corn
1/4 cup cheddar cheese, shredded
4 each chicken nuggets, cooked, diced
1/4 cup Ranch dressing
Garnish fried onions

Directions:

1. Combine all ingredients in a bowl. Mix well to combine.

Dinner tonight...

Lasagna Roll-Ups

Ingredients:

1 lb. ground beef, cooked
1 jar Bertolli marinara sauce
1/2 box lasagna noodles, cooked, drained
1 container ricotta cheese
1 bag Italian blend cheese, shredded
As needed parmesan cheese, grated
As needed Italian seasoning

Directions:

1. Preheat oven to 375 degrees Fahrenheit.
2. Spray a casserole dish with cooking spray.
3. Combine cooked ground beef and marinara sauce together in a medium saucepan, simmer on medium-low for about 30 minutes.
4. Spread some of the bolognese in the bottom of the casserole dish.
5. Pat all the lasagna noodles dry.
6. Spread 1 Tbsp. ricotta cheese on each noodle, sprinkle with shredded cheese. Roll up and place seam side down in the casserole dish. Repeat with remaining noodles.
7. Top with remaining bolognese, more shredded cheese, parmesan cheese and Italian seasoning.
8. Bake for 20-25 minutes until golden brown.
9. Cool, and serve.

Breakfast today...

Easy Omelet Muffins

Ingredients:

4 eggs, beaten
2 slices ham, small dice
1 Tbsp. scallion, chopped
1 piece red bell pepper, small dice
1 piece green bell pepper, small dice
1 handful spinach, chopped
1/4 cup cheddar cheese, shredded
As needed salt and pepper

Directions:

1. Preheat oven to 350 degrees Fahrenheit.
2. Spray 6 muffin cups with cooking spray in a muffin tin.
3. Combine all ingredients in a bowl. Whisk well to combine.
4. Divide among the cups and bake for 15-20 minutes.
5. Remove from oven, cool and enjoy! Bon appetit!!!

Fun appetizer for fight night:

Smoked queso dip

Ingredients:

32 oz. Velveeta cheese, cubed
8 oz. cream cheese, cubed
1 lb. ground beef, cooked, drained
2 cans Rotel diced tomatoes and green Chile's
1/2 cup cheddar cheese, shredded
1 small yellow onion, diced
As needed taco seasoning
Tortilla chips

Directions:

1. Pre-heat smoker to 250 degrees Fahrenheit.

2. Combine all ingredients in an aluminum pan.

3. Smoke for 1 to 1 1/2 hours depending on type of smoker. Stir frequently.

4. Remove and serve with tortilla chips.

MY DINNER TONIGHT!!! Yum!!! πŸ˜‹πŸ˜‹πŸ˜‹

Loaded Pulled Pork Fries:

Ingredients:

3 each potatoes, washed, julienne (French fry cut)
3 Tbsp. Olive oil
As needed salt
As needed pepper
1 1/2 cups pulled pork
1/2 cup cheddar cheese, finely shredded
2 each scallions, sliced
3 pieces bacon, chopped, cooked
1 jalapeΓ±o, sliced
To taste BBQ sauce
To taste ranch dressing
Garnish fried onions

Directions:

1. Pre-heat oven to 400 degrees Fahrenheit.
2. On an aluminum foil lined baking sheet, coat fries in olive oil and sprinkle with salt and pepper.
3. Bake for 15-20 minutes.
4. Remove from oven and top with the pork and cheese. Put back in oven for about 5 minutes.
5. Remove and top with bacon, green onions, jalapenos, BBQ sauce, ranch and fried onions.

Buffalo Chicken Salad: πŸ₯—πŸ₯—πŸ₯—

1 romaine heart, quartered, chopped
1/4 cup broccoli slaw
1 Roma tomato, diced
1 green onion, sliced
1 hardboiled egg, chopped
2 pieces bacon, chopped, cooked
1/2 avocado, diced
1 chicken tender, cooked, diced
1/4 cup cheddar cheese, shredded
1 handful fried onions
To taste chipotle ranch
To taste medium Buffalo sauce

Combine all ingredients in a bowl. Mix well to combine! Enjoy! Bon Appetit!

Green juice recipe:

1 whole pineapple, peeled, cored, cubed
1 English cucumber, chopped
4 each lemons, peeled, quartered
2 cups fresh spinach
1 k**b ginger, peeled, halved
32 oz. water

Combine all ingredients in a blender. Blend well. Strain, and store in a pitcher.
