Sometimes repeating the same word over and over can diminish its meaning and the power behind it.

That is how I feel about the word 𝘁𝗵𝗮𝗻𝗸 𝘆𝗼𝘂!! today ❣️

What I feel goes far 𝗯𝗲𝘆𝗼𝗻𝗱 𝗴𝗿𝗮𝘁𝗶𝘁𝘂𝗱𝗲.

This weekend became the busiest weekend of our year, and it happened because of every single person who walked up to our food truck.

𝗧𝗵𝗮𝗻𝗸 𝘆𝗼𝘂 to the reporters who shared our story.

𝗧𝗵𝗮𝗻𝗸 𝘆𝗼𝘂 to the chefs and culinary students who stopped by to taste our food and talk with us about cooking.

𝗧𝗵𝗮𝗻𝗸 𝘆𝗼𝘂 to the families, the riders, the workers, the children, the grandparents, and every person who trusted us with their lunch, dinner, or simply a moment of their day.

One of the greatest joys for me is watching people experience our food for the first time.

Seeing their faces when they open a plate 🥩

Watching them take that first bite of an empanada.

Hearing them come back just to say:

"That was exquisite."
"That was amazing Ma'am"
"We'll be back to try more"

Those moments stay with me.💕

As a cook, there are few things more rewarding than seeing people genuinely connect with something you created with your own hands.

Every empanada, every plate, every sauce, every batch of passion fruit juice begins from scratch in our kitchen, and knowing that it brought joy to so many people this weekend is something I will carry with me for a very long time.

🔥 𝗦𝗢𝗟𝗗 𝗢𝗨𝗧. 𝗘𝘃𝗲𝗿𝘆 𝘀𝗶𝗻𝗴𝗹𝗲 𝗶𝘁𝗲𝗺. 🔥

Last night, every pot was empty, every container was scraped clean, and every empanada warmer was completely sold out.

Our evening was short, but we made the morning long.

We were back in the kitchen early today, preparing everything from scratch once again so you can enjoy another day of authentic Ecuadorian cuisine.

A special 𝘁𝗵𝗮𝗻𝗸 𝘆𝗼𝘂 to everyone who tried our 𝗦𝗵𝗿𝗶𝗺𝗽 𝗥𝗶𝘀𝗼𝘁𝘁𝗼. We prepared pounds and pounds of it for the rally, and by the end of the night there wasn't a spoonful left. The response was incredible, and today we're making it all over again with the same flavor and care that made it one of yesterday's favorites.

And of course, 𝗮 𝗵𝘂𝗴𝗲 𝘁𝗵𝗮𝗻𝗸 𝘆𝗼𝘂 𝘁𝗼 𝗲𝘃𝗲𝗿𝘆𝗼𝗻𝗲 𝘀𝘂𝗽𝗽𝗼𝗿𝘁𝗶𝗻𝗴 𝗔𝗹𝗲𝘅'𝘀 𝗵𝗮𝗻𝗱𝗰𝗿𝗮𝗳𝘁𝗲𝗱 𝗲𝗺𝗽𝗮𝗻𝗮𝗱𝗮𝘀. Behind every tray is a lot of work, patience, and pride. Watching customers enjoy something made by his own hands has been one of the most rewarding parts of this event for our family.

This Friday and Saturday, Patas Azules™ Ecuadorian Cuisine will be part of one of the biggest festivals in the Black Hills at Black Hills Harley-Davidson.

And this? This is only the beginning of summer.
For the past days, our family has been deep in production creating a 𝘀𝗽𝗲𝗰𝗶𝗮𝗹 𝗿𝗮𝗹𝗹𝘆 𝗺𝗲𝗻𝘂 designed exclusively for this weekend — bold flavors, handcrafted food, real ingredients, and the kind of cooking that takes time, discipline, and heart.

After an incredibly 𝗶𝗻𝘁𝗲𝗻𝘀𝗲 𝗠𝗲𝗺𝗼𝗿𝗶𝗮𝗹 W𝗲𝗲𝗸𝗲𝗻𝗱 at Jolly Lane, today we’re taking a much needed production day to reset, restock, prep, and get ready for one of the biggest events of the season.
𝗦𝗼 𝘁𝗼𝗱𝗮𝘆 𝗧𝘂𝗲𝘀𝗱𝗮𝘆 𝘄𝗲 𝘄𝗶𝗹𝗹 𝗡𝗢𝗧 𝗯𝗲 𝗮𝘁 𝗟𝗼𝘀𝘁 𝗖𝗮𝗯𝗶𝗻 𝗕𝗲𝗲𝗿 𝗖𝗼. 🍺

As many of you already know… real food, handcrafted doughs, slow-roasted meats, fresh ceviche, sauces, marinades, empanadas, and from-scratch Ecuadorian cooking simply cannot be rushed overnight.

Everything we serve takes time, discipline, preparation, and a whole lot of heart behind the scenes.

This Memorial Weekend, we pause with gratitude and respect for the brave men and women who gave their lives in service to this country. ❤️🤍💙

As the daughter of a veteran, this weekend means a lot to me personally, and it is truly an honor for 𝗣𝗮𝘁𝗮𝘀 𝗔𝘇𝘂𝗹𝗲𝘀™ to serve our community during such an important American holiday.

Yesterday we stayed quiet & preparing for today… but this morning I woke up inspired and very early made a special batch of 𝗵𝗮𝗻𝗱𝗺𝗮𝗱𝗲 𝗰𝗼𝗿𝗻 𝗲𝗺𝗽𝗮𝗻𝗮𝗱𝗮𝘀 for my 𝗴𝗹𝘂𝘁𝗲𝗻-𝗳𝗿𝗲𝗲 friends 🌽💙

No fillers. No shortcuts. 𝗝𝘂𝘀𝘁 💯🐮 𝗰𝗵𝘂𝗰𝗸 𝗿𝗼𝗮𝘀𝘁, authentic Ecuadorian sazón, and food made with pride and heart. 🔥🇪🇨
