Note about the Chips and Salsa

At Taqueria Falcon, 'authentic' isn't just a buzzword—it's how Mady Falcon honors Mexican culinary heritage. 🇲🇽✨
A lot of corporate Tex-Mex chains can hand out 'free' chips and salsa because they open generic bags and pour salsa from giant commercial jugs. But our roots go back to the scratch-cooking traditions of Chiapas, where everything is made by hand with fresh, raw ingredients.
Our kitchen team arrives hours before our doors open to chop fresh produce, roast chiles, and fry tortilla chips so they hit your table warm and crisp. To pay our team fairly for this intense daily labor and to keep our taco and burrito prices completely honest, we charge a small fee for our chips and queso. We do not serve salsa 💃 because it is not authentic Mexican food. Mady makes her on homemade red and green sauce for the food.
