The Joy Bus Diner

Jennifer’s delicious Green Shakshuka recipe was featured in Green Living magazine! This signature Shakshuka became such a guest favorite at the diner that she created a fresh, playful twist. This vibrant green version is full of spinach, fresh herbs and bright, savory flavor, with just enough heat to wake up your palate. Nutritious, comforting and deeply satisfying, it’s the kind of dish that is good for the body and soul.
