Hi everyone!
Its somehow only been six months since we reopened. It feels like just yesterday… but also a lifetime ago, somehow.
Now that we are officially in the slower season we are finally able to begin seriously looking into taking on some of the larger projects that have been on our to-do list since we reopened that we have just been too busy to follow up on.
In order to allow more time to expedite those projects we are deepening our winter hours by being closed on Tuesdays as well as Wednesdays for the time being.
We plan on returning to 7 days a week by summer.
We will also be fully closed for 2 weeks beginning on Tuesday February 18th and returning on Thursday March 6th so that we can renovate and overhaul a few things (and sneak in a much needed vacation)
I feel like it's important to announce some of the plans we have in store for Panchos, so that you all have something to look forward to while we are closed for that time…
Some of those things have been public knowledge for a while now, others may be (hopefully exciting) news.
First, we need to make the Screaming Possom Panchos merch a reality.
We are (finally) ready to reincorporate the pastas and dinner offerings, which many of you have been waiting for.
Also, renovating our beautiful bar and acquiring a beer and wine license, so that we can create a more pub-like atmosphere in our large second dining room, offering entertainment such as games and live music.
Beyond that though, the plan has always been to branch out from our roots as a pizzeria by offering a menu that will incorporate other types of cuisine that fit into our takeout focused “limited-service” model in order to widen our relevance outside of simply serving excellent pizza.
Specifically we have been exploring recipes and logistics involved in offering a taqueria menu, meaning: Burritos, Quesadillas and Tacos.
We are also exploring:
Middle eastern cuisines, such as hummus, tabbouleh, falafel, kebabs and shawarmas.
Barbeque style meats and sides
Curries and Indian Dishes, Specifically Tikka Masala (which is great on a pizza)
Gobblin Fries…. imagine the customizability of pizza… but served over fries. We have been diligently sampling as many permutations as we can think of… so far my favorite has been chicken tenders, onions, pickles and american cheese melted over fries… occasionally with a few onion rings tossed in for good measure. It's a seriously dangerous precedent, which we may well need to open up to the public.
