Learning how to smoke meat is something that I would like to learn how to do. I think I would really enjoy the science behind it.

To get a hint of smoke for today’s special, we burned post oak chips in the pan while cooking it in our convection oven. Not a smoker, but I think it worked.

When you walk into the Kumback today, don’t expect it to smell like a BBQ joint, but I think it provided the effect we were looking for in the meat. Just a hint.

Today’s Special-

BBQ Beef Sandwich. Shredded Beef, BBQ Sauce, Red Onion, and House Made Pickles. Served with a side of your choosing.

We don’t always do a special on Monday’s. If you’ve been to the Kumback in the mornings recently, you may have noticed the young lady pictured below is with child.

When she calls me at 5:26am, I jump out of bed. We’ll be training her maternity time replacement this week, but until then, I’m ready to do my best to cover for her.

She called this morning and I sprang into action. But it was a false alarm. Much like a Braxton Hicks contraction. The baby hadn’t arrived and our AM cook hadn’t either.

Our cook got here roughly around the time I did so I had time to whip up a special.

Today’s Special:

Meatloaf. Will be served with Mash Potatoes and Corn on the Cob.

I normally like to do a certain type of fare on Tuesday’s. Not sure why I pick Tuesdays to do that, but I do.

Not today thought. Today’s Special will not follow the normal path.

We will have an hours of operation change this week. We apologize if it affects your dining plans with us.

The two kids pictured below are getting married this weekend and we’d like to be there for it. Since I’m the father of the bride, I kind of have to be there.

Although I believe our staff could handle the business needs of the community in our absence, I made different plans.

We have scheduled a work crew to come in and take care of some things starting Friday morning. So we will be closed Friday and Saturday this week.

The work being done will not hinder our ability to open up for normal hours next week.

Thanks to everyone that dined with us for Breakfast or Lunch today. We appreciate each and every one of you.

With that said, we will be closing the restaurant early today. Our staff worked very hard today and we are going to give them some time to enjoy the rest of the 16th Celebration Weekend.

We hope to see you at the rodeo and the street dance this evening or maybe even at a class reunion or two. With the night off, I might do all three of them.

We will be closed at 3pm today.

Today’s special is posted below…………..and it’s one that I’ve wanted to do for a while.

It seems strange that it’s taken us so long to do this one since it’s one of my favorite sandwiches to order. In fact I had one two days ago.

One of the reasons we haven’t had it as a special before, is I wanted to make each ingredient from scratch. I wanted to cure the brisket myself. I wanted to ferment the cabbage myself. And I just haven’t made the time to do it.

But I found some substitutes that I find acceptable and so we are going to give it a shot. If we add this item to our menu, all those things will be made from scratch. We’ll see how it goes today and plan for the future accordingly.
