Sweet Prairie Food Truck Home of "Clyde" the Food Truck. Serving North Dakota comfort food with flavor.
🤤🌮 Clyde the Food Truck was built at the end of July 2020.

My family helped turn him into a food truck. Check out the videos of all the photos from us working on Clyde. If you come to the truck I (Esther) am the one cooking and my daughter Lily is usually taking orders. Top sellers include- Vampire tacos, loaded mac-n-cheeses, biegnets, deep fried cheesecake rolls. How he got his name—The truck was called a Workhorse, so naturally, I thought of a Clydesdale and the truck is kind of red-neck-looking, so "Clyde" seemed like an appropriate name.

P.B.R Rolls- (fan favorite) pickles, bacon and cheese. Fried in egg roll wrappers served with ranch.

🌮Tacos🌮 2- per order

Vampire (fan favorite!) pork, crunchy cabbage, Clyde’s sauce, pickled red onions on a cheesy flour tortilla.

Pork Belly- Tender marinated pork belly, topped with kimchi, crunchy cabbage, Clyde’s sauce. On corn tortillas.

🧀Loaded Mac-n-cheese🧀
Creamy homemade Mac topped with⬇️

Hot Honey Chicken- crispy chicken, candied jalapeños, pickled red onions, hot honey sauce.

Jalapeño Popper- jalapeños, bacon, Clyde’s sauce or ranch and fried jalapeno cheese curds.

BBQ- pork, bbq sauce.

Can also order regular and bacon Mac.

Pork Belly Tacos, in the making.
I have people come up to my truck and ask what pork belly is all the time.
I’m pleasantly surprised people don’t know where bacon comes from😂.
Pork belly is just bacon without the curing and smoking.
When it’s cooked right it’s tender, juicy and packed full of flavor.
I’ve had some amazing pork belly in my time and I’ve had a lot more bad pork belly! 😢 so I prefer to cook it myself… at least I know it will be tender instead of chewy & dry.

Food truck Friday #6 mos counted the last time!

Spinach artichoke dip deep fried! It’s cheesy, crunchy and packed full of flavor.

Filling the calendar! Currently my Weekends in July are full, except Sundays and a few weekdays.

If you would like to get my food truck at your Care center or workplace during a weekday please reach out. I’m taking about 1 food truck location per week. A few weeks are already filled up.

I have one Saturday open in June and a few weekdays also.

August- 2 Saturdays and a few weekday spots, before school starts for me on the 17th, after that only weekends.

September- only taking weekend locations since I’m back to work. A few are already filled.

Reach out if you’re not to Far from my home base.

If the weather allows I may stay open till October.

As always I have a family and they come first! Hopefully my son doesn’t injury himself this summer🤨.
⛈️🌪️If bad weather is forecasted such as high winds, hail or tornados, do not expect me to show up, I don’t want to die….. anytime soon.

I’m trying to stay close to home base this summer… meaning I’m fine with driving a hour or more. But if your 2-3 hours from me… please don’t message unless you need help finding a food vendor and I’ll reach out to my contacts and share your event.

Simple menu, since I need to get in the rythmn again!

Vampire Tacos ( Pork, Clyde's sauce, thinly sliced cabbage, pickled red onions on a cheesy flour tortilla shell) 2- per order. These are a fan favorite!

Philly Cheesesteak Sandwiches- Side of tots

P.B.R Rolls- Pickle, bacon and cheese deep fried egg rolls, served with a side of Clyde's Sauce (spicy) or a side of ranch.

Loaded Tator tots or loaded mac-n-cheese (Mac avaiblae till sold out)
Tots or Mac will be topped with-

1. P.B.R - topped with pickles, bacon and ranch.
2. Hot Honey Chicken- Crispy fried chicken, hot honey sauce
3. Bacon
4.Philly Cheesesteak (shaved ribeye, onions, peppers & cheese)
5. BBQ Pork
6. Vampire- pork, Clyde's sauce, pickled red onions, and thinly shredded cabbage.
Regular mac & cheesy tots avaiable also

Deep Fried Cheesecake rolls with strawberry rhubarb sauce

I make all my sauces on Clyde expect for the Ranch & BBQ sauce (Demon Pig is just like the one I make!).
