I’ve heard the Belon Oyster described as tasting like battery terminal dipped in iodine. I find them to be full of umami and minerallity. They are originally from the north of France near the Belon River. The ones that we have are from Glidden Pt. Oyster Farms on the bed of the Damariscotta river. They are a European flat and are delicious in my opinion.
