we all know about the importance of salt, fat, acid, heat as the foundation of flavor. and at l&b we feel strongly about implementing four more elements for building the perfect dish or kit.

color: we eat with our eyes first. a vibrant plate signals freshness & variety before you even take a bite. colors invite & excite.

dimension: layers, height & texture make a meal feel intentional and abundant, almost artsy. garnish often gets us lots of dimension. nothing sad and flat!

contrast: sweet meets savory, soft meets firm, creamy meets tart. together opposites keep every bite balanced & interesting.

Quick & Simple Chicken

ingredients:
* 8 chicken wings, legs, breasts, whatever you like
* 2-3c fresh pineapple
* optional: fresh herbs/sesame seeds, I personally add sambal to the rub too

chicken rub mix:
* equal parts: onion powder, garlic powder, smoked paprika, sea salt, fresh or dried thyme, chili powder and a dash of black pepper

recipe:
* preheat oven to 375°
* heat some avocado oil/oil of choice in a large saute pan
* add chicken meaty side down & let sizzle and crack for about 5 mins...resist the urge to poke and prod just leave her be
*it’s time to flip when you jiggle jiggle the pan and the chicken slides around
*then cook for another 5mins.
* add pineapple to a baking dish and chicken on top
* bake 10mins

This would go great over some jasmine or basmati rice with lime & cilantro!

I hope you guys had a great weekend!
As you may have seen on stories I had an adorable girl’s night @ thewildflowerfarm, I decluttered the house (my favorite activity, not joking), watched my kids play in the rain, and did a little work!

🍎 Back to school Lunch Inspiration ✏️📚

Lunch duties became much easier in our house when I developed our simple Lunch5, which is that every lunch should have at least one from each of these 5 categories: fruit, veggie, protein, grain, treat. This keeps lunch balanced as well as teaches kiddos what their food is actually made up of (bonus points if they also know what it does for their body!), keep descriptions short and age-appropriate.

Teach your kids to make their own lunches in Kindergarten! It's a little extra work in the beginning, but you’ll be thanking yourself by month two. Kids 5+ not only CAN make their own lunches, they will feel a sense of pride and responsibility afterward! They’re also more likely to eat foods they’ve prepared themselves.

***Making food for ourselves is a basic human necessity, start laying healthy foundations with your kids now💪

In the meantime, here are some of my simple and easy lunch tips & tricks:

🍞 Replace sliced bread with crackers, tortillas, mini-bagels, nut/seed crackers, english muffins etc.
🍎 Make your own apple sauce (great kiddo project)
🧠 Reframe preconceived notions (this is a tough one): You do not have to send a sandwich every day. Nothing wrong with sending leftover pizza. Send things even if you know they will not touch it (send something like that each day, they do not have to eat the entire lunchbox to feel full and exposure is key!). Getting away from arbitrary rules really helps.

⭐️ Cut sandwiches into fun shapes
💌 Add a sweet note naming one special thing you love about them
♨️ Thermos! Soups, tea, hot cocoa, the possibilities are endless and the bellies will be warm!
♻️ Use lunch bag + small containers, bento box, reusable meal prep containers, cloth napkins, reusable utensils
🍱 Make a “lunch bin” in fridge & pantry, so kiddos make their own lunch choosing one item from the lunch5: fruit, veggie, protein, grain, treat (this is also great for snack plates too!)
✔️ When kiddo walks into the house from school, lunchbox gets emptied & cleaned, and they make their lunch. Now it’s done.

Like Buddha, these bowls are balanced🧘‍♀️

Offering ancient grains high in protein and fiber, a vibrant assortment of plant-based protein and vitamins, with a light dressing or sauce on top, Buddha bowls keep it real. I've never seen Buddha’s original recipe but here are the building blocks to my perfect bb😉

in any combinations:
*Ancient grains: like quinoa, farro, brown rice, wild rice or even cauliflower rice
*Colorful veggies: the brighter and more contrasting the better, shredded carrot & red cabbage, snap peas, banana pepper, cucumber, edamame, spinach, fresh herbs,
*Dressing: in any combination: sesame or avocado oil, maybe tahini, lime juice or apple cider vinegar, honey or agave, s&p, optional: sambal
*Garnish: sesame seeds, chopped almonds/peanuts/cashews, cilantro, lime, dried fruit, clementine

Storage & Serving Suggestions:
*Build your bowl in one big tupperware
*Break “bowls” up into bento boxes (shown here)
*Store each component of the bowl separately (grains in one, veggies in another, garnish in a third) and assemble at mealtime.

Welcome to L&B week!! It’s our second annual week of fun giveaways and collaborations to show gratitude for our loyal clients and local supporters!

I often stop and think about how one of my friends shared my first post on facebook, and from that, a word-of-mouth-chain-reaction happened and it is that first share that is responsible for 75% of my regular clientele today. In a nutshell, that’s what these last 2 years have felt like. Support and positivity and being lifted up by others and a feeling of complete gratitude.

My meal prep fams are busy people, so I also want to say thank you and spread positivity to those supporting my business while they kick ass at their own.

So it only seems fitting to have a week that celebrates the local supporters and fellow humans out there!

Another HUGE and genuine thank you to the talented for all of the gorge photos you'll be seeing this week and throughout the next few months. Talk about hard-working people!
