This was at a place that I used to work at called Uptown Cafe it was located in Clayton right across the street from Wasbai Sushi Bar. And ironically neither of them isn’t there anymore and I wonder why. Lol.

I used stay getting into with the workers and managers because they got mad that I would throw food away or not serve/cook s**t that was molded, spoiled, or outside TCS Food time. They thought since I had a degree and was only the person truly certified to be in a kitchen that I was the hot s**t and thought I just knew everything. Nahhh it was just going against my ethics and morals as a person yet alone as a chef and I wasn’t standing for it.

What they failed to realize that a little mold or bacteria can actually kill a person(s). Especially if that person(s) has a very week immune system. Or has some type of medical disease that doesn’t react well to bacteria. It’s a reason why people are supposed to be certified while working in a kitchen.
I would say something to the workers when I saw them doing s**t that can kill people and my favorite response they would hit me with was is those yo peoples out there?! 😂😂
And I’m like nahh but how would you like it if somebody did that to yo food and they would be quiet af.
Then I would say something to the mangers and their favorite line they would hit me with was just cook it off, it will be fine. im like nahh it doesn’t work that way and I will throw the s**t in the trash. This was at every RESTAURANT JOB I EVER HAD!!!!
Bar Louis was the last and final restaurant job I took and that was as a dishwasher/prep. Please tell me why I was the only certified chef in that kitchen and there was people who been working there 10+ years. I’m coming there and teaching mfs the managers and line cooks about ServSafe s**t, s**t they should’ve already known before I got their. 😂😂
They used the prep sink that is used to wash raw chicken and other items in as a mop bucket. Just let that sink in.

Back when I was working at Mercy’s and I was on prep. If I had a spoon my sauce would definitely nappe the back of my spoon. Nappe is an French culinary term, meaning if I pick up my spoon up from my sauce and run my finger down on the back side of my spoon, I would have a streak aka a Nappe running down the spoon, which ultimately shows that my sauce has great consistency and would coat well onto my ingredients.
This was easy to do with this sauce tho because it wasn’t made from scratch. Instead all it was made from heavy whipping cream, grated parm cheese, minced garlic, a little of oil, and a damn slurry. A slurry isn’t nothing but corn starch and water use to thicken up the sauce. See it was easy as hell to do because the key to the sauce was the slurry. If I had my slurry just right then my sauce consistency would be perfect. Simple.

In Culinary school we are required to take a baking course enable for us to graduate and the baking students are required to take a cooking course which I think is very cool. At first I hated it because baking was a new skill that needed to be learned and I wasn’t fu***ng with because it was a lot more science involved then it was with cooking. As time went on I started learning and understanding the science then I started to develop a love for it because I was loving what I was able to produce with my hands and it also taste amazing!!
I love sweets but the older I get the harder it is for my body to digest the sweets, so it’s easier for me to get sick when I consumed too much sweets and not enough food. Pretty much I would eat too much sugar and not enough grease. I wasn’t balancing my diet. Then we would spend infinite amount of money on sweets and it wouldn’t last me only but 2-3 days. I got tired of running outta sweets and not wanting to more money on em just for them to be gone in 2.5 seconds. So I got back to baking. Therefore I tapped back into my baking skills. I bake all of my sweets from scratch with organic and or natural products. The more practice I give myself the better my sweets come out.
I keep making snickerdoodle cookies because they’re one of my favorite cookies to make as well as by far the easiest to make.
I keep switching up the recipe too. This recipe I used this time has less cream of tartar and no shortening either. Although you can taste the differences without the shortening it’s still good tho! But now my next batch will be making snickerdoodles with vegetable shortening.

If you was ever in Mercy’s Hospital at the time I was working there I guarantee you, you was one happy patient. Food is key essential to not only feeding your body but also to feeding your soul. Ever heard the ol saying you’re what you eat. Not only did I make sure your food was amazing I also made sure you had art with your food too. Every time I make this I forget to take a damn picture of it. Lol. This is called Ghetto meal aka Grandma’s meal. Growing up my great grandma stayed in the kitchen, we also didn’t have a lotta money, we was like an extended family of 10-12 ppl living in one house under one roof, and s**t me, my two little brothers and my cousin could damn near eat a house by ourselves. Lol. So grandma was always being creative in the kitchen finding meals to make outta simple Ingredients that would be laying around in the kitchen. This isn’t nothing but simply elbow noodles, tomato sauce, and sauté ground beef hot dogs all made into one dish served with some corn bread. I cheated a bit on this one tho, for one we yet don’t have correct tools and utensils to make elbow noodles from scratch. You need a certain type of pasta cuter for the elbow noodle and we don’t have that yet and the corn bread is definitely boxed corn bread made with organic eggs and vanilla almond milk. I’m still trying to master a recipe for organic corn bread, but it still was right on point. But I can definitely taste the differences from when I eat non organic food to organic food. Non organic food doesn’t even taste right to me anymore. But I ain’t gonna lie I still have a hard time with certain organic food that I make to get use eating the food without soo much added preservatives and fake s**t that be in it but man I can digest the food a whole lot better. I don’t feel so heavy after eating organic food even tho I have a high metabolism, I still felt very heavy and sluggish. I find myself having a lot more energy too. Trust me it’s well worth it.

This was when I was working back at Mercy’s Hospital. I would usually get compliments on my stir fry that I would make, not only form the patients but also for the cooks, serves, and even the head chef. See the key is stir fry and or anything with a sauce for that matter is to make sure you let the sauce actually cook into the ingredients of the food. Otherwise when you plate the sauce would rub everywhere.

When we I say hand cut freshly made we mean exactly just that.
So don’t mind my face I get serious when I’m cooking. Lol.
But cutting 1 on 1, the DONTS! First off this isn’t for sale because when I cook for the business I wear gloves, as well take my wedding band off and put my rubber one on, I also will be in my chef uniform. When I cook dinner at home for me and my wife I don’t wear gloves, I keep my band on, and f**k wearing my chef clothes. Simple. Lol.
Anyways the way I am cutting this potato for chips is all wrong and here’s why. For one my hips isn’t lined up with my arms, that means I ain’t standing straight (p.s. I had slight tear in my hamstring that’s been healing on its own for like 5 years now lol so I have hard time standing correct with all 10 toes down), then my knife isn’t sharp so now I am using force in my arms, my hand, my wrists to be able to hold the knife right way as well as put full force on the knife to cut the potato, yea it builds muscle but it definitely start to hurt and become uncomfortable. And my left hand isn’t guiding my potato correctly with my knife that’s why some of my chips are smaller then the other. Just like when you shot a gun, or shooting hoops. You’ve to make sure your hips and feet are align and planted correctly otherwise your shot will be off even tho you’re aiming at specific target. Same concept when it comes to cutting slicing and dicing in cooking. In fact it’s a very crucial process in cooking because if your cuts are uneven then your will food will cut uneven. Simple.
Don’t worry tho soon I will make another video showing off my true nature as a chef and the proper DOs when it comes to cutting, slicing, and dicing.

A good ol S&K sub with I wanna believe this was maple honey turkey, or applewood smoked turkey I don’t remember which one but that mug smacked. I did cut the bread too thick tho. So my skills as a chef are A1 and isn’t basic. I have skills set in just about everything in cooking. Therefore we are gonna have many menus with a lotta options but things you haven’t seen before yet alone isn’t at your favorite average restaurant. What we are showing you now is just slight things of what would actually be on the menus. Ya know just kinda getting your feet wet before jumping in the pool. Homestyle aka homemade aka made from scratch organic vanilla cake.
My second or third time making a cake from scratch and each time I get better and better but this one is different because it’s made with all organic products. Organic eggs, organic flour, organic sugar, fresh organic vanilla extract… but with skim milk and not whole milk.
Now the scientists in me is ready to do If-then hypothesis. If I bake with organic flour and ingredients but use almond milk then what’s my results.
If I bake with organic cake flour and organic ingredients if that’s even an option lol with almond milk then what’s my results. Pretty much I want to experiments with different organic flour and ingredients as well with milk to see which one will give the best taste ever!!

P.S. we will be starting testing group very very soon. The testing group will consist of multiple people who want to try out our new recipes that we create for FREE. Yesss you heard us right for FREEE. All we need from y’all is YOUR HONEST FEEDBACK. Be real with us because lying isn’t gonna do either of us any good. We didn’t get this far based upon lies and that’s facts. Simple.

For this runner up we have our made from scratch pancakes, made from scratch hash browns mixed in with some organic eggs. I might add some strawberries on top to really set it off! But this mug right here definitely smacked!
