I was at a restaurant in New Smyrna beach with my brother-in-law.
He opened up the menu & within 5 seconds said, "Crab Rangoons." 🦀
I asked him, "That was fast, you really like those?"
He replied, "If I open a menu and see Crab Rangoons, I order them with no questions asked."
It got me thinking... we don't have those, but we could.
We ordered some pre-made from one of our distributors just to try them out and see their ingredients list.
We had the staff and a few regulars taste test them and the feedback was they weren't bad, but just ok.
We're not looking for just ok, we want them to be fantastic.
We knew we could make them better in-house.
So, we got to work on a recipe and eventually we had a finished product.
Then came the moment of truth, the brother-in-law taste test.
Here's his word for word feedback:
"Filling is 9/10. Dumpling might have been a tad overcooked, 6.5/10, we'll chalk that up to human error. Sauce is fire, 9/10. Overall, absolutely fire. 8.5/10, I would order a second round with potential to hit 9.5 territory. Super unique and good while maintaining all Rangoon properties. Definitely had not had anything like it before, I think it'll be a hit and should go on the menu. Where else can you get a seafood based Rangoon? It's literally one of one."
For me personally, I loved everything about his review but the overcooking part of course, so you know we had to have him back to try them again.
2nd Visit Feedback: "Filling proportion was 10/10, didn't feel robbed of crab meat or anything like that, cooked perfectly tonight too."
So there you have it, the story behind how Crab Rangoons got added to the menu.
Made by hand in house, stuffed with a generous portion of real Lump Crab Meat, less cream cheese & other ingredients, served with a sweet chili sauce.
